Chinese Chicken and Rice Soup

Whisk the eggs with a pinch of salt and pepper in a small bowl
- 4 large eggs
- Kosher salt and freshly ground pepper
- 2 tbsp peanut or vegetable oil
- 2 large tomatoes, halved and thinly sliced
- 4 c low sodium chicken broth
- 1 bunch scallions, sliced
- 1 tbsp sesame oil
- 2 tsp soy sauce
- 1 c shredded rotisserie chicken, skin removed
- 4 c baby spinach
- 1 1/2 c cooked rice
Quick Chilled Pea Soup

Reserve 1/2 c peas from the package
- 1 pkg frozen peas
- 1/4 c water
- 2 c fresh baby spinach
- 1 1/2 tsp EVOO
- 1 garlic clove, minced
- 1 tbsp EVOO
- 1 garlic clove, minced
- 1 c ice water
- 1 tbsp fresh mint, chopped
- 1 tbsp fresh lemon juice
- 1/4 tsp salt
- 2 tbsp half and half
- 1/4 tsp fresh ground pepper
Baked Cambozola w/ Pecans and Cranberries

Preheat the oven to 400 degrees F
- 1/2 c chopped pecans
- 1/2 c dried cranberries
- 2 tsp packed light brown sugar
- 1/4 tsp curry powder
- Kosher salt
- 1 lb Cambozola cheese, rind removed, cubed
- Sliced pears and/or crackers for serving
Vanilla Mousse Cheesecake

- 40 vanilla wafers, crushed
- 3 tbsp butter, melted
- 4 pkg cream cheese, softened and divided
- 1 c sugar, divided
- 1 tbsp plus 1 tsp vanilla, divided

- 8 oz. whipped cream
Sweet & Spicy Coleslaw

- 2 lbs green cabbage
- 4 carrots
- 1 medium onion
- 1/2 c mayonnaise
- 1/4 c mustard
- 2 tsp apple cider vinegar
- 1 c sugar
- Freshly ground black pepper
- 1/2 tsp cayenne pepper
- Kosher salt
Spinach Arugula Frittata

In a 9" ovenproof nonstick skillet, bring 1/4 c water to a boil over moderately high heat
- 5 oz. baby spinach
- 3 oz. baby arugula
- 4 large eggs
- 5 large egg whites
- 1 1/2 tbsp freshly grated parmesan reggiano cheese
- Salt and freshly ground black pepper
- 4 tsp vegetable oil
- 1 medium shallot, thinly sliced
- 1 medium frying pepper, thinly sliced
- 1 tsp chopped thyme
Fresh Cherry Relish & Goat Cheese Crostini

In a medium bowl, stir the cherries, jicama, scallion, mint, vinegar and cayenne
- 1 c fresh cherries, pitted and finely chopped
- 1/2 c finely diced jicama
- 1 medium scallion, very thinly sliced
- 1 tsp chopped fresh mint
- 1/2 tsp red wine vinegar
- Pinch of cayenne
- Kosher salt and freshly ground pepper
- 2 1/2 oz fresh goat cheese
- 2 1/2 oz ricotta cheese
- 18 baguette slices
Garlic Oil for Pasta Salad

Cook garlic and red pepper flakes in olive oil over medium heat, stirring, 3 mins; let cool
- 3 garlic cloves, thinly sliced
- Pinch of red pepper flakes
- 1/3 c olive oil

Lemon Alfredo Pasta

- 1 1/4 c heavy cream
- 1 egg yolk

- 1/3 c grated pecorino cheese

- 12 oz. cooked fettuccine

Greek Sloppy Joes

In a large skillet, cook beef, onion and garlic over medium heat for 6-8 mins or until beef is no longer pink
- 1 lb lean ground beef
- 1 small red onion, chopped
- 2 garlic cloves, minced
- 1 can tomato sauce
- 1 tsp each dried oregano, coriander, cumin and cinnamon
- 2 c chopped romaine
- 6 kaiser rolls, split and toasted
- 1/2 c crumbled feta cheese
