- 3 garlic cloves
- 2 medium tomatillos, husked and rinsed
- 1/2 medium jalapeño pepper
- 1/2 cup cilantro stems
- 3 tablespoons canola mayonnaise (such as Hellmann's)
- 1/2 teaspoon sugar
- 3/8 teaspoon salt, divided
- 2 cups very thinly sliced red cabbage
- 1 tablespoon fresh lime juice
- 1 tablespoon extra-virgin olive oil
- 4 (6-ounce) tilapia fillets
- 1/4 teaspoon freshly ground black pepper
- Cooking spray
- 8 (6-inch) corn tortillas
- 1/4 cup fresh cilantro leaves

- Old-Fashioned Chocolate Frosting:
- Vegetable-oil cooking spray
- 1 cup all-purpose flour, plus more for dusting
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 ounces unsweetened chocolate, finely chopped
- 1/2 cup whole milk
- 1/2 cup granulated sugar
- 2 large egg yolks, plus 1 large egg white, room temperature
- 1/4 cup ( 1/2 stick) unsalted butter, softened
- 1/2 cup packed light-brown sugar
- 1/2 teaspoon pure almond extract
- 1/2 teaspoon pure vanilla extract
- 1 1/2 cups confectioners' sugar
- 3 tablespoons unsweetened Dutch-process cocoa powder
- Pinch of salt
- 5 tablespoons unsalted butter, softened
- 4 ounces cream cheese, room temperature
- 7 ounces bittersweet chocolate, melted
- 2/3 cup sour cream
- Sift sugar, cocoa powder, and salt into a medium bowl; set aside.
- Put butter and cream cheese into the bowl of an electric mixer fitted with the paddle attachment. Mix on medium-high until fluffy. Reduce speed to low. Gradually add sugar mixture. Mix in chocolate and sour cream. Use immediately.
