Preheat oven to 425°F. Preheat grill pan to high
- 3/4 lb. chicken breast cutlets
- Extra-virgin olive oil
- 2 teaspoons grill seasoning
- 1 pizza dough
- 2 tablespoons butter
- 1 tablespoon Worcestershire
- 2-3 tablespoons hot sauce, or more
- 1/2 cup tomato sauce {4.5oz}
- 4 oz. shredded Monterey Jack cheese
- 2 oz. cup blue cheese crumbles
- 3 scallions, thinly sliced

Place an oven rack in the center of the oven and preheat the oven to 350 degrees F
- BROWNIE:
- Nonstick cooking spray
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup dark cocoa powder (recommended: Hershey's Special Dark Cocoa)*
- 4 1/2 teaspoons instant espresso powder
- 2 teaspoons pure vanilla extract
- 1/2 teaspoon fine sea salt
- 1/2 teaspoon baking powder
- 2 large eggs
- 3/4 cup unbleached all-purpose flour
- 1 cup bittersweet chocolate chips
- FROSTING:
- 1/4 cup unsalted butter, at room temperature
- 3 ounces mascarpone cheese, at room temperature
- 2 ounces bittersweet chocolate chips, 1/3 cup melted and cooled
- 2 teaspoons pure vanilla extract
- 2 cups confectioner's sugar, sifted
- 1/4 teaspoon fine sea salt (scant)

In a food processor, combine the first eight marinade ingredients until the cilantro and garlic are finely chopped
- MARGARITA MARINADE:
- 1/2 cup cilantro leaves
- 3 shots (about 1/2 cup) tequila
- 3 limes, juiced (about 6 tbsp.)
- 3 tablespoons vegetable or olive oil
- 1/2 shot (about 1 1/2 tbsp.) Cointreau or Grand Marnier
- 1 tablespoon plus 1 tsp. light agave or acacia honey
- 2 cloves garlic, crushed
- 1 teaspoon ground cumin
- 2 pounds mahi-mahi, cut into rectangular chunks
- Salt and pepper
- TACOS:
- 1/2 pound white or green cabbage, shredded
- 2 avocados, pitted, flesh scooped out of the skins
- 1/2 cup Mexican crema, creme fraiche or sour cream
- 3 limes, 2 juiced (about 4 tbsp.), 1 halved
- Salt and pepper
- 3 vine or plum tomatoes, seeded and chopped
- 1 1/2 small red onions, 1/2 finely chopped, 1 very thinly sliced
- 2 large jalapenos, 1 seeded and finely chopped, 1 thinly sliced
- A small handful of cilantro, chopped
