Roasted Butternut Squash Soup

Using a vegetable peeler, peel the squash
- 1 large butternut squash, 2 1/2 to 3 pounds
- 1 1/2 cups apple cider
- 1/3 cup brown sugar
- 2 cinnamon sticks, cut in half crosswise
- 2 tablespoons melted butter
- 1 cup diced onion
- 2 tablespoons butter
- 4 cups chicken broth (32 oz container)
- dash ground ginger
- dash ground nutmeg
- 1/2 cup heavy cream
- salt, to taste
- butter-toasted pumpkin seeds, optional, see below

- Ingredients
- 2 tablespoons canola oil
- 1 medium onion, chopped
- 1 1/2 pounds 80 percent lean ground beef
- 1 cup fresh bread crumbs
- 1 tablespoon grill seasoning
- 1 tablespoon Worcestershire sauce
- 1 large egg
- 1/2 (8-ounce) package sliced baby portobello mushrooms
- Kosher salt and freshly ground black pepper

Chunky Chicken and Chorizo Chili

Heat a big, deep skillet over medium high heat with 1 tablespoon extra virgin olive oil
- 1 tablespoon extra-virgin olive oil, 1 turn of the pan
- 3/4 pound chorizo, chopped
- 2 pounds ground chicken
- 3 tablespoons chili powder, 3 palm fulls
- 1 tablespoon ground cumin, a palm full
- 1 onion, chopped
- 3 cloves garlic, finely chopped
- 1 red bell pepper, chopped
- 1 (15-ounce) can red beans, drained
- 1 bottle beer
- 1 (28-ounce) can diced fire roasted tomatoes
- Salt
- 6 cups chicken stock
- 2 cups quick cooking polenta
- 2 tablespoons butter
- 2 scallions, finely chopped
- 2 tablespoons freshly chopped thyme leaves
Banana Fritters (Southern Food)

These Banana Fritters are great as is but I added a little vanilla extract in the batter for more depth of flavor
- 1 2/3 cups all-purpose flour
- 2 teaspoons baking powder
- 2 tablespoons confectioners' sugar
- 1/4 teaspoon salt
- 2/3 cup milk
- 1 egg
- 3 bananas, mashed and sprinkled with 1 teaspoon lemon juice to keep from discoloring
- Oil for deep frying

- 4 cups homemade turkey stock or low-sodium chicken stock, heated to a simmer
- Pan drippings from one turkey
- 1/4 cup red or white wine
- Fine sea salt, to taste
- Ground black pepper, to taste
Quick Sausage and Mushroom Lasagna

Preheat oven to 400°F. Heat oil in heavy large pot over high heat
- 2 tablespoons olive oil
- 2 8-ounce packages sliced crimini (baby bella) mushrooms
- 1 large onion, chopped (about 2 cups)
- 2 tablespoons dried Italian seasoning blend
- 1 pound hot Italian sausages, casings removed
- 3 garlic cloves, pressed
- 1 cup dry red wine
- 4 2/3 cups marinara sauce (from two 26-ounce jars)
- 1 9-ounce package no-cook lasagna noodles
- 1 15-ounce container ricotta cheese
- 2 8-ounce bags Italian blend grated cheese (4 cups)

Bûche De Noël (Real Simple)

“Bûche de Noël” is French for “Yule log”
- Chocolate Ganache:
- butter, for the pan
- 1/3 cup all-purpose flour, spooned and leveled
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon fine salt
- 4 large eggs, separated
- 1 teaspoon pure vanilla extract
- 3/4 cup plus 3 tablespoons confectioners’ sugar
- 1 cup heavy cream
- 1 tablespoon sour cream
- 1/3 cup heavy cream
- 3 ounces semisweet chocolate, chopped
- Bring the cream to a boil in a small pot. Remove from heat, add the chocolate, and let stand for 5 minutes. Whisk to combine. Cool slightly before using.
