Spicy Mussels and Chorizo

1. Heat oil in a large, heavy stockpot over medium heat
- 3 tablespoon extra-virgin olive oil
- 1 large shallot, minced
- 2 garlic cloves, thinly sliced
- 1/4 teaspoon crushed red-pepper flakes
- 2 cups dry white wine
- 3 cups canned crushed tomatoes with juice
- 4 ounces dried, hot chorizo, cut on the diagonal into 1/4-inch slices
- 1 teaspoon coarse salt teaspoon coarse salt
- Freshly ground pepper
- 2 pounds mussels, scrubbed and debearded
- 1/3 cup coarsely chopped fresh flat-leaf parsley
Cranberry-Mint Infusions

1. Put mint leaves in a large heatproof bowl
- 2 cups fresh mint leaves
- 4 cups boiling water
- 2 cups cranberries
- 1 cup sugar
- 3/4 cup limoncello (see Notes)
- 1 1/2 cups vodka
- 2 tablespoons freshly squeezed lemon juice
- 12 mint sprigs
Lasagna Rolls with Roasted Red Pepper Sauce

These rolls require some assembly time but are a nice change of pace from layered pasta
- Lasagna:
- 8 uncooked lasagna noodles
- 4 teaspoons olive oil
- 1/2 cup finely chopped onion
- 1 (8-ounce) package presliced mushrooms
- 1 (6-ounce) package fresh baby spinach
- 3 garlic cloves, minced
- 1/2 cup (2 ounces) shredded mozzarella cheese
- 1/2 cup part-skim ricotta cheese
- 1/4 cup minced fresh basil, divided
- 1/2 teaspoon salt
- 1/4 teaspoon crushed red pepper
- Sauce:
- 1 tablespoon red wine vinegar
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 garlic cloves, minced
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1 (7-ounce) bottle roasted red bell peppers, undrained
- 1/8 teaspoon crushed red pepper

- 4 cups apple cider
- 12 cups cold water
- 1/2 cup kosher salt
- 1/4 cup sugar
- 1 tablespoon black peppercorns
- 2 bay leaves
- 1 (5 to-6 pound) beef brisket, fat cap 1/4 to 1/2-inch thick
- Rub:
- 1 tablespoon kosher salt
- 1 tablespoon paprika
- 1 tablespoon freshly ground black pepper
- 1 tablespoon sugar
- 1 tablespoon onion powder
- Cider BBQ Sauce:
- 2 tablespoons butter
- 2 tablespoons whole grain mustard
- 1/4 cup light molasses
- 1/4 cup apple cider
- 1 tablespoon apple cider vinegar
- Kosher salt and freshly ground black pepper

Preheat the oven to 350 degrees F and butter a 9-by-13-inch baking dish
- 7 tablespoons unsalted butter, plus more for the dish
- Kosher salt
- 1 pound elbow macaroni
- 1 small onion, finely chopped
- 2 stalks celery, finely chopped
- 3 cups shredded rotisserie chicken
- 2 cloves garlic, minced
- 3/4 cup hot sauce (preferably Frank's)
- 2 tablespoons all-purpose flour
- 2 teaspoons dry mustard
- 2 1/2 cups half-and-half
- 1 pound yellow sharp cheddar cheese, cut into 1-inch cubes (about 3 1/2 cups)
