Cranberry-Apple Pie (Cooking Light)

This juicy double-crusted beauty combines two favorite fall season flavors
- 9 ounces all-purpose flour (about 2 cups)
- 2 teaspoons sugar
- 1 1/4 teaspoons salt, divided
- 6 tablespoons chilled butter, cut into small pieces
- 6 tablespoons chilled vegetable shortening, cut into small pieces
- 6 tablespoons ice water
- 1 1/2 cups fresh cranberries
- 1/3 cup packed dark brown sugar
- 5 tablespoons all-purpose flour
- 1/4 teaspoon ground cinnamon
- 2 1/2 pounds Gala apples (about 6), peeled and cut into 1/2-inch pieces
- 2/3 cup grade B maple syrup
- Cooking spray
Seared Scallops with Summer Vegetables and Beurre Blanc

- 1/2 cup dry white wine
- 1/4 cup chopped shallots
- 3 tablespoons chilled butter, cut into small pieces
- 1/2 teaspoon grated lemon rind
- 5/8 teaspoon kosher salt, divided
- 1 medium zucchini
- 1 medium yellow squash
- 1 orange bell pepper, cut into 1-inch pieces
- 1 small red onion, cut into wedges
- 2 tablespoons olive oil, divided
- 1 cup grape tomatoes
- 3 garlic cloves, thinly sliced
- 1/2 teaspoon black pepper, divided

- 1/3 pound ground sirloin
- 2/3 pound ground turkey
- 1 Cup Seasoned Panko
- 1/4 Cup Grated Parmesan Cheese
- 1 Egg (lightly beaten)
- 1 TB (Palmful) of McCormick Grill Mates (25% less sodium) Montreal Steak Seasoning
- 1 TB Worcestshire Sauce

- 2 tablespoons unsalted butter, plus more, room temperature, for dishes
- 1/2 cup granulated sugar, plus more for dishes
- 8 large egg yolks plus 10 large egg whites, room temperature
- 2 tablespoons all-purpose flour
- 1/4 cup plus 2 tablespoons fresh lemon juice (from 2 lemons), plus 2 tablespoons finely grated lemon zest
- 1 cup whole milk
- Garnish: confectioners' sugar
