In a large skillet, heat 2 tablespoons of the olive oil
- 1/4 cup extra-virgin olive oil
- 3/4 pound shiitake mushrooms—stems discarded, caps sliced 1/3 inch thick

- 1/2 pound cleaned squid—bodies sliced crosswise 1/4 inch thick, large tentacles halved
