Sauteed Chicken with Capers

Directions Slice each chicken breast in half horizontally
- 4 boneless, skinless chicken breasts (about 2 pounds total)
- 1/2 cup all-purpose flour
- Coarse salt and ground pepper
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons champagne or white-wine vinegar
- 3 tablespoons unsalted butter, cut into pieces
- 2 tablespoons capers, plus 1 teaspoon brine
- 1 tablespoon chopped fresh parsley
Campfire Biscuit S’mores

In a bowl, combine the Quick Biscuit Mix with the sugar
- Quick Biscuit Mix
- 2 tablespoons sugar
- 1/2 cup water
- 1/2 cup mini chocolate chips
- Extra-virgin olive oil, for brushing
- 1/4 cup seedless raspberry jam
- 8 marshmallows (or 4 jumbo)
- 4 large sturdy rosemary branches, bottom three-fourths of the leaves stripped off
Pina Colada

Combine ingredients in a blending jar
- 1 1/4 oz light rum
- 2 oz pina colada mix
- 1/2 oz pineapple juice
Thai-Style Fried Rice

Directions Combine the chile and 2 tablespoons of the fish sauce in a small dipping bowl
- 1 fresh green chile, sliced, or chili paste or crushed red pepper flakes
- 3 tablespoons fish sauce
- 2 tablespoons peanut oil or other vegetable oil (not olive oil)
- 2 garlic cloves, minced (1 tablespoon)
- 1 tablespoon minced peeled fresh ginger
- 2 scallions (both white and green parts), minced (about 3 tablespoons)
- 3 ounces boneless pork, such as shoulder or loin, cut into 2 x 1/2-inch strips
- 1 cup shredded bok choy or other similar green vegetable
- 1 1/2 cups cooked jasmine or basmati rice
- Sprigs of fresh cilantro, for garnish
- 1/2 cucumber, peeled and cubed
- 1 or 2 fresh lime wedges for garnish

- 4 slices thick-cut bacon, cut into 1/2-inch pieces
- 2 medium leeks, white and pale-green parts only, halved lengthwise, sliced crosswise

- 2 teaspoons chopped fresh thyme
- 1 pound pappardelle or fettuccine

- 1 tablespoon grapeseed oil
- 1/2 pound shelled and deveined shrimp, finely chopped
- 2 garlic cloves, minced
- Kosher salt
- 1/3 cup sour cream
- 1/4 cup cream cheese, at room temperature
- 1 1/2 teaspoons chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon finely grated lime zest plus 2 tablespoons fresh lime juice
- 1 Hass avocado—peeled, pitted and finely diced
- 2 tablespoons finely chopped cilantro, plus more for garnish
- Thinly sliced scallions and jalapeños, for garnish
- Hot sauce, chips and crudités, for serving

Preheat the oven to 350 degrees F
- 1 stick unsalted butter, at room temperature, plus more for the dish
- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 3/4 teaspoon salt
- 3/4 cup granulated sugar
- 3/4 cup packed dark brown sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 3/4 cup butterscotch chips or toffee pieces
- 3/4 cup chopped pecans
Fried Rice with Shallots
