Super Short Ribs Recipe

“This came from an old oven recipe my mom had for short ribs
- 3 medium onions, cut into wedges
- 3 to 3-1/2 pounds bone-in beef short ribs
- 1 bay leaf
- 1 bottle (12 ounces) light beer or nonalcoholic beer
- 2 tablespoons brown sugar
- 2 tablespoons Dijon mustard
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 2 teaspoons beef bouillon granules
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 3 tablespoons all-purpose flour
- 1/2 cup cold water
- Hot cooked noodles

Like a lot of what I’m doing this year, this butter is a job for Christmas Eve
- 1 x 250g pack of butter
- • 75g dried cranberries, really finely chopped
- • a few sprigs of fresh thyme, leaves picked
- • 4 fresh rosemary sprigs, leaves picked
- • a few sprigs of fresh sage, leaves picked
- • sea salt and freshly ground black pepper
- • 1 clementine
Posh Roast Pork Party Kabobs

These are my dressed-up, posh version of good old kebabs
- • 2kg piece boneless rolled pork loin or 2 x 1kg pork loin joints, the best quality you can afford, at room temperature
- • a small bunch of fresh rosemary, leaves picked, plus a few more small sprigs
- • 3 heaped tablespoons fennel seeds
- • sea salt and freshly ground black pepper
- • 3 cloves garlic, peeled and finely sliced
- • 8 handfuls mixed salad leaves (such as baby chard, rocket, watercress and red or white chicory)
- • a small bunch of fresh flat-leaf parsley, leaves picked
- • 2 fresh red chillies, deseeded and finely chopped
- • 2 fresh green chillies, deseeded and finely chopped
- • 1 x 500ml tub natural yoghurt
- • 1 lemon
- • extra virgin olive oil
- • 10 pitta breads

Scrumptious pork chops packed with sausage, sautéed apples, onions and fennel seeds
- 2 fresh Italian sausages, chopped
- 2 onions, sliced
- 2 apples, chopped
- 1 1/4 cups of apple cider
- 1 tablespoon of fennel seeds
- 4 slices of whole grain bread, toasted and cubed
- 1 tablespoon of grainy mustard
- 2 tablespoons of olive oil
- 4 centre cut pork chops, 1 and one half inch thick

- * 1x14 ounce can refried beans
- * 1 1/4 cups light sour cream
- * 1/2 teaspoon ground cumin
- * 1/2 teaspoon salt
- * 1/4 teaspoon hot pepper sauce
- * 2 avocados
- * 1/3 cup finely chopped onion
- * 2 tablespoons lime juice
- * 1/4 teaspoon hot pepper flakes
- * 2 cups shredded Cheddar cheese

- Sauce
- 2 pounds (908g) small vine-ripened tomatoes
- 1 small fennel bulb, coarsely chopped
- 1 medium yellow onion, coarsely chopped
- 1 red bell pepper, coarsely chopped
- 4 cloves garlic, halved
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons balsamic vinegar
- Salt and freshly ground black pepper
- 1 can crushed tomatoes (19oz/540 ml)
- 2 cups vegetable broth
- 1 1/2 teaspoons dried Italian seasoning
- 1/8 teaspoon crushed red pepper flakes
- 8 whole basil leaves (medium sized), chopped
- Filling
- 2 cups part-skim (5%) ricotta cheese
- 1 cup 2% cottage cheese (mash with fork)
- 1/2 cup packed freshly grated Parmesan cheese
- 1/2 package frozen spinach, thawed, squeezed dry and finely chopped

- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/8 teaspoon freshly ground black pepper

Quick-time Sausage Cassoulet

This dish was inspired by a builder called Dusty, who kept talking about a sausage casserole
- • 2 handfuls of dried porcini mushrooms, broken up
- • 8 thick slices of dry-cured streaky bacon
- • extra virgin olive oil
- • 1 large bunch of mixed fresh rosemary, thyme and sage
- • 2 red onions, peeled and roughly chopped
- • 2 cloves of garlic, chopped
- • 1 large carrot, peeled and roughly chopped
- • ½ celery heart, finely chopped
- • 2 bay leaves
- • ½ bottle of red wine
- • 3 x 400g tins of plum tomatoes
- • 2 x 400g tins of borlotti or cannellini beans, or use a mixture
- sea salt and freshly ground black pepper
- • 24 chipolata sausages or 16 larger sausages
- • 1 large, stale loaf, crusts removed
- • 1 small handful of fresh thyme, leaves picked
Parmesan Smashed Potatoes

1. Steam potatoes in a stovetop steamer until tender, about 15-20 minutes
- 6 Yukon Gold potatoes, washed and cut into quarters
- 1 cup grated Grana Padano cheese
- 1/2 cup extra virgin olive oil
- Salt and pepper to taste
