- 1/2 pound crab (cooked and shelled)

Chicken Potpie

Pour the chicken stock and milk into a saucepan
- 2 c low sodium chicken stock
- 1 c whole milk
- 2 Tbs butter
- 2 onions, finely chopped
- 2 carrots, diced
- 3 celery stalks, diced
- 3 cloves garlic, minced
- Salt and Pepper
- 1 c frozen peas
- 1 c frozen corn kernels
- 2 c cooked chicken, cut into small chunks
- ¼ c plus 1 Tbs all-purpose flour
- Fresh thyme leaves
- Single crust pastry dough
- 1 egg
Jalapeno Corn Cakes with Avocado Salsa.

- Cakes
- 1 cup all-purpose flour
- 1 cup yellow corn meal
- 2 Tbs. sugar
- 1 Tb. baking powder
- 1 tsp. salt
- Pepper to taste
- 2 cups corn, fresh or frozen, roughly chopped
- 1 jalapeño, diced
- 2 eggs
- 1 cup milk
- 3 Tb. melted butter
- Salsa
- 3 large ripe avocados, chopped
- 1 small red pepper, diced
- 1/4 cup chopped green onions
- 3 tomatoes, diced
- 2 clove garlic, mined
- 3 Tbs. cilantro
- 1 jalapeño, diced
- 1/2 lime, juiced
- 3 Tb. olive oil
- Salt and Pepper to taste
Asparagus and Fresh Mozzarella Frittata with Parmesan and Chives

Wash and dry asparagus tips, and cut into sizes which will fit into your pan in a single layer
- 8 oz. asparagus tips or cut asparagus pieces
- 2 tsp. + 2 tsp. olive oil
- salt and fresh ground black pepper to taste
- 6 eggs, well beaten
- 1/2 - 1 tsp. Spike Seasoning (optional but recommended)
- 1/2 cup fresh mozzarella pearls or fresh mozzarella pieces (about 5 oz., could also use 1/2 cup grated mozzarella)
- 2 T grated parmesan cheese
- 2 T chopped chives or green onions (I snip the chives with kitchen scissors, which is easier than chopping)
Coffee Jello

The combo of coffee and sweetened condensed milk is inspired by Vietnamese coffee
- 1/2 c cold water
- 2 cups strong coffee, hot. I used two packages of Starbucks Via. The coffee needs to be strong. This isn't the time for Sanka instant. :)
- 1 can (14 oz) sweetened condensed milk (not evaporated milk)
- 3 packages of Knox unflavored gelatin
Bushwacker Jelly Shots

- 1/2 cup water
- 3/8 cup vanilla ice cream, melted
- 2 envelopes Knox gelatin
- 1/4 cup Kahlua
- 1/4 cup crème de cacao
- 1/4 cup Bailey’s
- 1/8 cup light rum
- 1/8 cup dark rum
- 1/8 cup amaretto
- 1/8 cup Coco Lopez
- Magic Shell ice cream topper, for garnish, if desired
Chocolate Chip Cookie Dough + Cupcake

Whisk together the flour, baking soda, and sea salt; set aside
- 1 1/2 cups all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon sea salt

- 1/4 cup white sugar
- 1/2 cup brown sugar
- 1 egg

- 1 cup miniature semisweet chocolate chips
- 1 (18.25 ounce) box yellow cake mix
- 1 1/3 cups water
- 1/3 cup canola oil
- 3 eggs
Eclair Cake

This is a very quick and simple no bake dessert cake
- CHOCOLATE SAUCE (for Eclair Cake) :
- 2 (3.5 ounce) packages instant vanilla pudding mix
- 1 (8 ounce) container frozen whipped topping, thawed
- 3 cups milk
- 1 (16 ounce) package graham cracker squares
- 1 (16 ounce) package prepared chocolate frosting
- 1/4 c. cocoa
- 1/4 c. milk
- 1 c. sugar
- 1/2 cube butter
Healthy Prawn Salad Sandwich

In a small food processor, blend the garlic clove with the basil leaves until finely minced
- 2 petite baguettes, sliced lengthwise and toasted
- ½ garlic clove
- 5 fresh basil leaves
- 4 tablespoons low-fat natural (plain) yogurt
- ½ lb of cooked prawns
- 1 scallion, sliced thinly
- ½ avocado, sliced
- 4 cherry tomatoes, sliced
- Salt and pepper to taste
- More fresh basil leaves for garnishing
