Barbecue Maple Chicken Kabobs

- 2 Tbsp. maple syrup

- 1 large red onion, cut into wedges
- 1 large green bell pepper, cut into 1 1/2-inch pieces
- 1 large red bell pepper, cut into 1 1/2-inch pieces

- 1 (3-oz.) package Oriental-flavored ramen noodle soup mix
- 1/2 cup dried cranberries
- 1 cup hot water
- 1/3 cup canola oil
- 1 tablespoon light brown sugar
- 2 tablespoons balsamic vinegar
- 2 tablespoons rice wine vinegar
- 1 tablespoon soy sauce
- 1 (10-oz.) package gourmet mixed salad greens, thoroughly washed
- 3 large nectarines, peeled and cut in wedges
- 1/2 cup coarsely chopped walnuts
- 1 (4-oz.) package crumbled feta cheese
Chipotle Honey Roasted Peanuts

- 1/2 cup panko bread crumbs
- 1/4 cup grated Parmesan
- 1 tbsp minced lemon zest
- 8 tsp purchased basil pesto, divided
- 4 halibut filets, 1 inch thick (4 oz each)
- ORZO WITH TOMATOES & ZUCCHINI
- 1 tsp minced garlic]

- 2 tsp olive oil
- 8 oz dry orzo pasta
- 1 3/4 cup chicken broth
- 1 cup halved grape tomatoes
- 1 cup chopped zucchini
- 1/4 cup sliced kalamata olives
- 2 tbsp minced fresh parsley
- Saute Garlic and pepper flakes in oil in saucepan over medium heat, about 1 minutes. Stir in orzo then add broth, tomatoes, and zucchini. Bring to a simmer and cook until orzo is tender and about 10 minutes. Stir in Olive and Parsley.
