- For the Cake:
- 4 tablespoons (1/2 stick) butter, softened, plus more for greasing
- 1/3 cup milk, warm
- 2 teaspoons instant yeast
- 2 cups flour, plus more for kneading
- 3/4 teaspoon salt
- 1/4 cup granulated sugar
- 1 egg, at room temperature
- 1 teaspoon vanilla extract
- For the topping:
- 1 3/4 sticks butter, softened
- 1 1/2 cups superfine sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2/3 cup flour
- 1/2 teaspoon salt
- 1/4 cup milk

For the Shiitake Bacon: Preheat the oven to 375°F
- 1 pound shiitake mushrooms, trimmed and thinly sliced (about 1/4 inch thick)
- 1/4 cup olive oil
- 1 1/4 teaspoons sea salt
- 1/2 teaspoon freshly ground black pepper
- 1 pound long pasta (spaghetti, linguine, fettuccine or or gluten-free pasta)
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 14 ounces soft tofu
- 1/2 cup water
- 2 tablespoons lemon juice
- 2 1/2 teaspoons sea salt
- Freshly ground black pepper
- Chopped fresh Italian parsley for garnish
- 1/2 cup blanched almonds
- 1 tablespoon nutritional yeast

Separate crescent roll dough into eight triangles and place on an ungreased 12-in
- 1 tube (8 ounces) refrigerated crescent rolls
- 1 pound bulk pork sausage
- 1 can (4 ounces) sliced mushrooms, drained
- 1 cup (4 ounces) shredded part-skim mozzarella cheese
- 1 cup (4 ounces) shredded cheddar cheese
Zucchini Pancakes

Sift the coconut flour into the eggs, garlic powder, salt, and pepper and beat them together
- 1/4 cup coconut flour
- 6 eggs
- 1/2 teaspoon granulated garlic
- 1/4 teaspoon black pepper
- 1/4 teaspoon sea salt
- 4 cups shredded zucchini (about 2 large or 4 small)
- 1/4 cup ghee or bacon fat for cooking
- Note: if you want to make these to serve as sweet pancakes versus savory, omit the sea salt, black pepper, and granulated garlic and add instead: 1 1/2 teaspoons pure vanilla extract and 1 teaspoon cinnamon.
Roasted Butternut Squash Ravioli with a Sage Brown Butter Sauce

In a large saute pan, over medium heat, melt 1 tablespoon of the butter
- 9 tablespoons butter
- 3 tablespoons minced shallots
- 1 cup roasted butternut squash puree
- Salt
- Freshly ground white pepper
- 3 tablespoons heavy cream
- 3 tablespoons grated Parmigiano-Reggiano cheese, plus 2 ounces
- Pinch nutmeg
- 1 recipe pasta dough, rolled out into wide ribbons, about 1/4-inch thick
- 12 fresh sage leaves
- 1 tablespoon finely chopped fresh parsley leaves
Kale & Quinoa Salad with Dates, Almonds & Citrus Dressing

Be sure to use a leafy kale in this salad, as opposed to a curly
- For the salad and toppings:
- 1 tablespoon olive oil
- 1 large onion, diced
- 1/2 cup red quinoa
- 1 small clove garlic, smashed
- 1 bunch lacinato kale (3/4 to 1 pound, with stems)
- 1/2 heaping cup whole dates
- 1/2 cup roasted salted whole almonds
- For the dressing:
- 1 clementine or mandarin orange, juiced
- 1/2 lime juiced
- 2 teaspoons maple syrup
- 1/4 cup extra-virgin olive oil
- Salt and freshly ground black pepper
