- 2 ounce Sliced Almonds

Restaurant-Style Salsa

Pulse all ingredients together in a food processor or blender until smooth, or your desired consistency is reached
- 2 (14-ounce) cans fire-roasted tomatoes, drained if you like a thicker salsa
- 3 cloves garlic, peeled
- 1 (4 oz.) can diced green chiles
- 1 bunch (about 2 cups loosely-packed) fresh cilantro
- 1 cup diced white onion
- 1 jalapeno, stem removed (and seeded, if you want less heat)
- 1 tsp. ground cumin
- 1 tsp. salt
- 1 tsp. sugar
- 1/4 tsp. black pepper

- 1 cup (2 sticks) butter, softened
- 4 cups sifted all-purpose flour
- 2 teaspoons salt
- 1/8 teaspoon black pepper
- 1/8 teaspoon cayenne pepper
- Dash of garlic powder
- Cooking spray

Prepare artichokes: Squeeze juice from 1 lemon half into a bowl of cold water, then drop same half into water
- 1 lemon, halved, plus 1 tablespoon fresh lemon juice
- 4 large artichokes (10 to 12 ounces each)
- 1 tablespoon all-purpose flour
- 1 tablespoon olive oil
- 1 tablespoon kosher salt
- 3 ounces small fresh porcino or cremino mushrooms (3), trimmed
- 1 1/4 cups heavy cream
- 1 tablespoon finely grated Parmigiano-Reggiano
- 1/2 teaspoon kosher salt, or to taste
- 1/2 teaspoon white truffle oil
- 1/4 teaspoon black pepper
- 1 teaspoon distilled white vinegar
- 4 large eggs
- Garnish: finely chopped fresh flat-leaf parsley

- 1 chipotle pepper from a can of chipotle peppers in adobo, minced, plus 1 tablespoon (15ml) adobo sauce
- 3 medium cloves garlic, minced
- 2 tablespoons (30ml) vegetable or canola oil
- 1 tablespoon smoked paprika
- 2 teaspoons light brown sugar
- 1 teaspoon dry mustard
- 1 /2 teaspoon kosher salt
- 24 baby potatoes (about 1 1/2 pounds; 680g)
- 12 strips bacon, halved crosswise
- Chopped flat-leaf parsley, for garnish
