- 1 1 6 8oz/170- 225g 8oz/170- 225g chicken breast
- 1/4 1/4 1/4 c soft goat cheese (chevre)
- 1/4 1/4 1/4 c julienned roasted red peppers
- 1/2 1/2 1/2 c loosely packed arugula
- 6 6 6 slices prosciutto
- salt & pepper for seasoning
- 1 1 1 Tablespoon oil for searing
- Extra equipment: Plastic wrap, a tenderizing hammer or wine/vinegar bottle
Shredded Thai Chicken Salad

1. In large bowl, toss salad ingredients
- 2 cups shredded deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
- 1 cup julienne (matchstick-cut) carrots
- 1 cup broccoli slaw mix
- 1 large green onion, chopped
- 2 tablespoons creamy peanut butter
- 2 tablespoons rice vinegar
- 1 tablespoon vegetable oil
- 1 tablespoon honey
- 4 teaspoons soy sauce
- 1/8 teaspoon red pepper sauce
- Fresh cilantro, if desired

1. First you will want to slow roast the tomatoes
- Ingredients for the Slow Roasted Tomatoes:
- 2 cups grape tomatoes (1-2 packages depending on the size of the container)
- 4 cloves garlic, unpeeled
- Drizzle of olive oil
- Salt and pepper
- Gallon Baggie
- Ingredients for the Pasta:
- 1 pound orecchiette pasta
- 1 tablespoon olive oil
- 2 tbsp chicken broth
- 3 cloves garlic, chopped
- 2 cups artichoke hearts
- 1/4 cup freshly chopped basil
- 1-2 ladles of pasta water
- Salt and pepper, to taste
- Parmesan cheese, to garnish the pasta dish

- Honey soy glaze:
- 1 chicken breast, cooked
- 1 head of bibb lettuce
- 1 avocado, sliced
- 2 scallions, sliced
- 2 large carrots, julienned
- Soy honey glaze (recipe below)
- 1 cup soy sauce
- 1/2 cup honey
- 1/2 cup orange juice
- 3 cloves garlic- minced
- 2 tsp corn starch
- 2 tbsp water

First, make sure your flour and butter are chilled
- For the Pastry:
- 1 1/4 cup unbleached white flour chilled in the freezer for 15 minutes (I used spelt and it worked beautifully)
- 1/4 tsp. salt
- 8 tbsp. (1/2 cup) cold unsalted butter
- 1/4 cup full-fat yoghurt (if liquidy, drain it first so it is thick and creamy)
- 2 tsp. fresh lemon juice
- 1/4 cup ice water
- For the Filling:
- 1/2 cup ricotta cheese
- 1/2 cup grated parmesan
- 1 About 1 pound of cherry tomatoes, halved
- 1 tbsp. olive oil
- Freshly minced basil for garnish (4 or 5 basil leaves)
- Salt and pepper, to taste
- For the Glaze:
- 1 egg yolk
- 1 tsp. water
