Freeform Peach Pie (Galette) Recipe

Ripe summer peaches don't hold up well in the oven, so it's best to bake them as briefly as possible, which is why...
- For the Filling:
- 1/2 batch Old-Fashioned Flaky Pie Dough
- 4 large ripe peaches (about 24 ounces; 680g) (see note above)
- 1 ounce tapioca starch (1/4 cup; 28g)
- 3 1/2 ounces sugar (1/2 cup; 100g)
- Pinch of Diamond Crystal kosher salt
- For the Egg Wash and Rum:
- 1 large egg
- 1 large egg yolk
- 1/2 ounce heavy cream (1 tablespoon; 15g)
- 1/8 teaspoon (1/2g) Diamond Crystal kosher salt; for table salt, use half as much by volume or use the same weight
- 1/2 ounce silver rum (1 tablespoon; 15g)
- To Serve (optional):
- Super-Thick and Fruity Whipped Cream

Preheat oven to 350 degrees
- 1-1/2 lbs cooked, cut up chicken. ( I placed my chicken in the crockpot with a cup of verde sauce cooked on high for 4 hrs and shredded)
- 6-8 Pasilla chili’s, roasted, skinned and seeded. ( you can use 2 cans of whole green chili’s if you like)
- 1 lb block of cheddar cheese, shredded
- 1/4 lb block Monterey jack cheese shredded
- 1/4 lb block of pepper jack cheese shredded
- 1 -12 ounce can evaporated milk
- 4 eggs
- 2 TBSp flour
- 2 tsp of salt

1. Vegetable Oil: Preheat 2-3 inches of Vegetable Oil to 360°F
- Batter
- 2 Egg Yolks
- 2 cups Rice Flour (plus additional to dredge)

- 1 head Broccoli (cut into large; evenly sized pieces)
- 1 head Cauliflower (cut into large; evenly sized pieces)

- 24 oz white button mushrooms
- 1/3 lb hot Italian sausage, ground
- 1/2 yellow onion, finely diced
- 6 cloves garlic, finely minced
- 1/3 cup dry white wine (I used pinot grigio)
- 2-3 sprigs of fresh thyme, chopped (or 1/4 tsp dried thyme leaves)
- 8 oz cream cheese
