Roasted Baby Potatoes with Creme Fraiche, Bacon, & Chives

1. Preheat oven to 400°F
- 1 pound unpeeled baby red-skinned potatoes, scrubbed, halved
- 2 tablespoons olive oil
- 1 teaspoon minced fresh rosemary
- Nonstick vegetable oil spray
- 3 bacon slices, coarsely chopped
- 3/4 cup crème fraîche or sour cream
- Chopped fresh chives
Crab Rangoon

Instructions 1. Preheat 1 inch of oil to 325 degrees over medium heat
- 1 5oz can of crab meat, drained (can be substituted with fresh or packaged crab)
- 4 oz cream cheese, softened
- 1 green onion, finely sliced
- 1/4 teaspoon garlic powder
- 1 teaspoon Worcestershire sauce
- 18 won ton wrappers
- oil for frying
Easy White Bean Dip

1. In a small saucepan or frying pan over medium-low heat, warm 1 TBS olive oil
- 2 TBS olive oil, divided (1 TBS / 1 TBS)
- 1/2 tsp fresh sage leaves, finely chopped
- 1 clove garlic, finely chopped
- 1 TBS fresh red onion, finely chopped
- 1 can (15 oz) cannellini beans, rinsed and drained
- 2 tsp fresh lemon juice
- Kosher salt and pepper to taste
White Cheese Chicken Lasagna

1. Preheat oven to 350 degrees F (175 degrees C)
- 9 lasagna noodles
- 1/2 cup butter
- 1 onion, chopped
- 1 clove garlic, minced
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 2 cups chicken broth
- 1 1/2 cups milk
- 4 cups shredded mozzarella cheese, divided
- 1 cup grated Parmesan cheese, divided
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon ground black pepper
- 2 cups ricotta cheese
- 2 cups cubed, cooked chicken meat
- 2 (10 ounce) packages frozen chopped spinach, thawed and drained
- 1 tablespoon chopped fresh parsley
- 1/4 cup grated Parmesan cheese (for topping)

- CREPES:
- 2 eggs
- 3/4 cup flour
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 3 teaspoon unsweetened cocoa
- 1 cup whole milk
- 2 tablespoons butter, melted
- 1 1/2 teaspoon Chambord
- 1/4 cup heavy cream, for whipped cream topping
- 1/2 teaspoon almond extract, for whipped cream topping

- 4 ounces unsweetened chocolate
- 1/2 cup sugar
- 1/2 cup evaporated milk

Rosemary Mashed Sweet Potatoes With Shallots

1. Heat 2 tsp oil in a small skillet over low heat
- 1 TBS olive oil, divided (2 tsp / 1 tsp)
- 1/4 cup thinly sliced shallots (about 1 large)
- 1 tsp brown sugar
- 10 oz sweet potatoes, peeled and diced
- 1 tsp finely chopped fresh rosemary
- Kosher salt and black pepper to taste
Cucumber Dill Salad

1. Wash the cucumbers and partially remove the peel in lengthwise strips, leaving a little skin between strips
- 2 medium cucumbers
- 3 TBS cider or white vinegar
- 1 TBS sugar
- 1 small red onion, sliced and broken into thin rings
- 3 TBS fresh dill, finely chopped
- Salt and pepper to taste
