- 1/2 cup chopped fresh cilantro
- 3 tablespoons fresh lime juice
- 1 teaspoon kosher salt

- 1 cup thinly sliced radishes

CARAMEL SAUCE: 1. Spread powdered sugar evenly in large nonstick skillet

1. Melt 2 TBS butter in heavy large skillet over medium-high heat
- 3 TBS butter, divided (2 TBS / 1 TBS)
- 1 1/2 lbs uncooked large shrimp, peeled, deveined
- 8 oz Andouille sausage or Tasso ham, cut into 1/2" cubes
- 2 cloves garlic, minced
- 1 cup dry white wine
- 1/2 cup heavy cream (for shrimp)
- 1/3 cup heavy cream (for grits)
- 1/2 TBS chopped fresh parsley
- 1/2 TBS chopped fresh thyme
- 2 3/4 cup water
- 1 cup quick-cooking grits
