- 1 (3 pound) boneless beef chuck roast, trimmed and halved

- 2 limes, juiced
- 1/4 cup olive oil
- 1/2 teaspoon ground cumin
- 1 (15-ounce) canned black beans, drained and rinsed

- 1 cup cherry tomatoes, sliced in half
- 1/2 small red onion, finely chopped

- 1 yellow or white onion, quartered
- 3 cloves garlic, unpeeled
- 1/4 cup extra-virgin olive oil
- 2 teaspoons dried thyme
- 1 to 2 tablespoons water
