Green Pepper and Tomato Salad

Combine peppers, tomatoes, onions, garlic, parsley in a bowl with your fingertips
- 2 green bell peppers, seeded and cut into 1 1/2-inch dice
- 3 vine-ripe tomatoes, seeded and diced
- 1 small onion, chopped
- 1 large clove garlic, finely chopped
- 1/2 cup flat-leaf parsley leaves, coarsely chopped
- 1/2 lemon, juiced (1 tablespoon)
- 1 tablespoon red wine vinegar
- 3 tablespoons extra-virgin olive oil
- Coarse salt and black pepper
- 1 teaspoon ground cumin, 1/2 a palm full

1.In a medium, nonreactive container, mix the soy sauce, brown sugar, sherry, coffee, and 2 tablespoons olive oil
- 2/3 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup cooking sherry
- 1/4 cup strong brewed coffee
- 1/4 cup olive oil
- 6 chicken legs
- ground black pepper to taste
Penne alla Vodka

Perfect penne pasta with vodka sauce
- Salt, to taste
- 1 (35-ounce) can Italian plum tomatoes (preferably San Marzano) with their liquid
- 1 pound penne pasta
- 1/4 cup extra-virgin olive oil
- 10 cloves garlic, peeled
- Crushed hot red pepper
- 1/4 cup vodka
- 1/2 cup heavy cream
- 2 tablespoons unsalted butter or olive oil for finishing the sauce
- 2 to 3 tablespoons fresh Italian parsley, chopped
- 3/4 cup Parmigiano-Reggiano, freshly grated plus more for passing if you like
Egg and Hash Brown Pie

- 6 slices bacon
- 5 eggs
- 1/2 cup milk
- 3 cups frozen hash brown potatoes, thawed
- 1/3 cup chopped green onions
- 1 1/2 cups shredded Cheddar cheese, divided

Crispy Cheesey Potato Waffle

(Optional) If you are using fresh potatoes, prepare mash potatoes like how you normally would
- 2 cups leftover mashed potatoes ( Or 3-4 medium sized potatoes, mashed)
- 2 large eggs
- 1/3 cup or milk
- 2 Tbsp. butter, melted
- 1 tsp garlic powder
- salt and pepper, to taste
- 1/2 cup freshly grated Parmesan cheese
- 1/2 cup all-purpose flour
