Lemon-Pineapple Cream Dessert

Crust: stir together graham cracker crumbs and sugar
- Crust:
- 22 double graham crackers, crushed
- 2 tbsp sugar
- 1/2 cup butter, melted
- 1/3 cup finely chopped pecans
- Filling:
- 1 (6oz) box lemon gelatin
- 2 cups boiling liquid (water & pineapple juice)
- 3 tbsp lemon juice
- 1 cup sugar
- 1 can evaporated milk
- 1 can crushed pineapple
- 1 (8oz) cream cheese, softened

- FOR THE SALAD
- 3 pitas
- 2 tbsp olive oil
- 1 head romaine lettuce, torn into pieces
- 1 english cucumber, seeded and cut into cubes
- 12 cherry tomatoes, halved
- 4 green onions, sliced
- 1 yellow bell, pepper,cut into squares
- 1/2 cup curly-leaf parsley, chopped
- 12 Kalamata olives, pitted and chopped
- Salt & Pepper
- FOR THE DRESSING;
- 1/4 cup lemon juice
- 1/4 cup olive oil
- 1 garlic clove, finely chopped
- 1 tbsp honey
Chicken Marinade

- 1 tbsp brown sugar
- 1 tsp honey
- 2 tsp butter
- 1 tbsp soy sauce
- 2 tbsp dijon mustard
- 1 tbsp olive oil or sesame oil
- 2 tsp grated ginger
- fresh garlic
Chicken Lasagna

Heat butter over low heat until melted
- 1/2 cup butter
- 2 cloves garlic, crushed
- 1/2 cup flour
- 1 tsp salt
- 2 cups milk
- 2 cups chicken stock
- 1/2 cup parmesan cheese, shredded
- 1 onion
- 1 tsp basil
- 1/2 tsp oregano
- 1/4 tsp pepper
- 10 lasagna noodles (cooked)
- 2 cups cottage cheese
- 2 cups cooked chicken, cut in small pieces
- 2 cups mozzarella cheese, shredded
- 2 pkg frozen spinach, thawed and drained
- 1/2 cup parmesan cheese ( topping)
Italian Meat Loaf Rollatini

Preheat oven at 350* greased 9x13 pan
- 1 cup fresh bread crumbs
- 2 eggs
- 2 29oz Marinara sauce
- 1 tsp Italian seasoning
- 1 tsp garlic salt
- 4 oz mozzarella cheese
- 1/4 tsp pepper
- 1 lb ground beef
- 1 lb ground veal
- 1 med onion, finely chopped
- 4 oz hard salami (boil to remove fat), sliced

- 1-½ lb. halibut steaks, about ¾ inch thick
- 500ml Tomato Salsa Sauce
- 1/3 cup finely diced cucumber
- 1/3 cup finely diced sweet red pepper
- 2 tbsp. finely diced red onion
- 1 small ripe tomato, finely diced
- 2 tsp Red wine vinegar
- 2 tsp chopped fresh coriander (optional)
- Dash hot pepper sauce
- ½ tsp. olive oil
- Salt and pepper to taste
Chicken Fried Rice

Toss chicken with soy sauce
- 1 cup cooked boneless, skinless chicken breasts, diced
- 1 tbsp of light soy sauce
- 2 tbsp olive oil
- 1 cup uncooked brown rice
- 2 cups low sodium chicken broth
Coleslaw Dressing

- 1 cup mayo
- 1/4 cup heavy whipping cream
- 1/2 cup rice wine vinegar
- 2 tbsp. sugar
- 1 tsp poppy seeds
- salt and pepper
Hot Dip

Mix and put in dish. Heat in oven for 15 minutes at 350* oven or heat in microwave
- 8 oz cream cheese
- 1\3 cup almond slivers
- 1\8 tsp pepper
- 1\8 tsp nutmeg
- 1 block Swiss cheese, shredded
- 1\3 cup mayonnaise
