Rugalah Pizza Bites

In large bowl, beat cream with butter until fluffy; beat in sugar and salt
- 1 pkg 250 g cream cheese, softened
- 1 cup butter, unsalted , softened
- 1 tbsp sugar
- 1/4 tsp salt
- 2 cups flour
- Filling;
- 3/4 cup pizza or pasta sauce
- 2 tsp each of oregano, basil
- Topping;
- 2 cups Mozzarella cheese, shredded
Pad Thai

In bowl, soak rice noodles to cover until they are limp and white, 20 minutes
- 1/4 lb dried rice noodles
- 2 tsp peanut oil
- 3 cloves garlic, minced
- 1 large egg, slightly beaten
- 1/2 lb small shrimp, peeled and deveined
- 2 cups bean sprouts
- 1/2 cup green scallions, sliced
- 3 tbsp rice wine vinegar
- 2 1/2 tbsp fish sauce
- 2 tbsp sugar
- 1 tsp chili sauce with garlic
- 2 tbsp dry roasted peanuts, chopped
Grilled Chicken Salad & Vinaigrette

- Balsamic vinaigrette:
- 1 tbsp finely chopped shallots
- 3 tbsp balsamic vinegar
- 1 tbsp olive oil
- to and pepper to taste
- Grilled chicken:
- 4 skinless, boneless chicken breasts
- non-stick cooking spray
- Green salad:
- 8 cups green leaf lettuce, washed and torn into bite-sized pieces
- 1/2 cup sliced, large black olives
- 1 large red bell pepper, stemmed, seeded and diced
- Balsamic vinaigrette:
- to to shallots and vinegar in a small mixing bowl and whisk to combine. Continue whisking and slowly add the olive oil. Season to taste with salt and pepper.

Marinated Red & Yellow Peppers

These peppers are a staple in our house, they add brilliant color and earthy flavor to almost anything
- 3 red bell peppers, cut in half lengthwise and seeded
- 3 yellow bell peppers, cut in half lengthwise and seeded
- 3 garlic cloves, minced
- 2 tbsp fresh basil, roughly chopped
- 1 tbsp fresh rosemary leaves, chopped
- 3 tbsp olive oil
- 1 tbsp freshly squeezed lemon juice

Falafel

FOR THE FALAFEL; Place the chickpeas in a large bowl
- FOR THE FALAFEL;
- 1 cup dried chickpeas
- 1/2 cup fine bulgur
- 1/4 cup all purpose flour
- 2 tsp baking pwd
- 2 tsp salt
- veg oil for deep frying
- 1 onion coarsely chopped
- 8 cloves garlic
- juice of one lemon
- 1/4 cup parsley
- 1/4 cup cilantro
- 2 tsp ground coriander
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp cayenne
- TARATOR BI TAHINI SAUCE;
- juice of one lemon
- 2 tbsp tahini ( sesame paste)
- 1 clove garlic, chopped
- 1 tbsp dijon mustard
- 1 tsp toasted sesame oil
- 1 egg yolk
- 3/4 cup veg oil
- water, 3 tbsp
- salt & pepper
Bacon Cheese Bites

Saute the almonds in the butter
- 10 slices bacon, cooked & crumbled
- 1/2 pound cheddar cheese, shredded
- 1 cup Hellman's Mayonnaise
- 2 tbsp Worcestershire sauce
- 1 cup slivered almonds, toasted
- 1 tbsp butter
- 1 small onion, grated
- 2 baguettes ( can fill 2 with less on each), toasted

Almond Chicken Gai-Ding

- 4 chicken breast
- 3 celery stalks
- 1 med red and green bell peppers
- 4 oz can bamboo shoots

- 3 tbsp cornstarch
- 2 cubes of chicken stock
