There are usually two times a year that I think of healthy eating
- 2 Cups Almond Flour
- 1 tsp baking soda + 1/4 cup of apple sauce
- 1/4 Cup Agave (Maple Syrup or Stevia)
- 1/2 Tsp Baking Soda
- 1 Tbsp Apple Cider Vinegar
- Dash of Salt
- 1 Tsp Vanilla Extract
- 2 Tbsp Coconut Oil (or Other Healthy Oil)
- 1 Cup Blueberries
Coconut Prawn Curry

This is a favourite dish from my village in Goa, one of those finger licking dishes that taste best eaten by hand
- Other ingredients:
- 500 gms prawns, shelled and deveined
- 1/2 tsp salt
- 1/2 tsp turmeric powder
- 1/2 tsp chilli powder
- 2 onions
- 10 dry red kashmiri chillies
- 1 tsp of ginger garlic paste
- 3-4 pieces of kokum (dried berry used as a souring agent)
- 2 tomatoes
- 3 green chillies roughly chopped
- 1 1/2 tsp of cumin powder
- 1 1/2 tsp of coriander powder
- 1 tsp of chilli powder
- 1/4 tsp of turmeric powder
- 1/2 tsp of tamarind paste ( I use the ready Priya's tamarind paste)
- 9 tbsps of coconut milk powder
- 2 cups of water

- 1 1/2 lb. boneless chicken breasts, cubed
- Poultry seasoning
- 1 Tbs. olive oil
- 1/2 cup chopped onion
- 2 (14.5 oz) cans of chicken broth
- 2 (10.75 oz) cans of cream of chicken soup
- 1 cup milk
- 16 oz. frozen peas & carrots
- 1 tsp. minced garlic
- 2 cups flour
- 4 tsp. baking powder

- 1 tsp. parsley flakes
- 1 cup milk

Instructions Preheat oven to 350ºF
- 1 cup hot coffee
- 1/2 cup unsweetened cocoa powder + extra for dusting pans
- 3/4 cup + 2 Tbsp canola oil
- 1 cup packed brown sugar
- 1/4 cup granulated sugar
- 2 tsp baking soda
- 1-1/2 tsp ground cinnamon
- 1/2 tsp cloves
- 1 tsp ground nutmeg
- 2-1/2 tsp ground ginger

- 3 eggs, room temperature

Best Ginger Cookies with Orange Clove Icing (Christmas Favorite!)

Preheat oven to 400 degrees
- 1/2 cup coconut oil, softened
- 3/4 cup organic fair trade sugar
- 2 Tbsp backstrap molasses
- 1 pastured egg
- 3 Tbsp milk (I use raw)
- 1/2 tsp pure vanilla extract
- 1 Tbsp ginger paste
- 1 3/4 cups organic flour (I use unbleached & unbromated)
- 2 tsp aluminum free baking powder
- 1/8 tsp sea salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground nutmeg
- 1 cup organic powdered sugar
- 1/2 tsp pure vanilla extract
- 4 tsp milk
- 1 drop Sweet Orange essential oil (or orange zest to taste)
- 2 pinches ground cloves

Instructions For the sauce Heat olive oil in large oven proof skillet over medium high heat
- For the sauce
- 1 tbs olive oil
- 1 small onion – finely chopped
- 8 oz mushrooms – sliced
- 1/4 Cup Green Bell Peppers
- 3 cloves garlic – minced
- 1 Can crushed tomatoes with liquid
- 1 small can tomato paste
- 1/4 teaspoon red pepper flakes
- 2 tsp raw sugar
- 1/2 tsp cumin
- Salt and pepper to taste
- 1/2 Cup heavy cream
- 1/2 Cup chardonnay wine
- For the meatballs
- 1 lb ground beef
- 1/2 lb ground hot sausage
- 1/2 cup bread crumbs
- 1 finely minced shallot
- 1 tsp dried thyme
- 2 sprigs fresh Rosemary chopped
- 1/2 Cup freshly grated Parmesean Cheese
- 2 cloves Garlic – minced
- 1 large egg, beaten
- 3/4 tsp kosher salt
- 1/4 tsp black pepper
- 2 tbs olive oil
- To finish
- 4 oz fresh mozzarella shredded
- 4 tbs fresh grated mozerella
- 2/3 tbs minced fresh basil for garnish

Instructions Place the dessicateed coconut in a large bow and stir in the jelly crystals and confectioners' sugar
- 200 g (1+3/4 cups) unsweetened desiccated coconut
- 1 x double sachet (23g) of raspberry jelly crystals (I used Hartleys)
- 75 g (1/3 cup) confectioners' Sugar
- 200 ml (2/3 cup) condensed milk
- 300 g (10.5 oz) good quality dark chocolate, melted
- 100 g (3.5oz) milk chocolate, melted
