- 1/2 pound bacon (mine was smoked)
- 1 1/2 pounds ground beef (ground sirloin, or 15% fat Angus Beef) formed into 4 patties.
- 1/2 ounce package of dried wild mushrooms, your choice (choose ones that are chopped or in pieces, not whole)
- 1/3 cup heavy cream
- 8 ounces fresh button or cremini mushrooms, sliced
- 1/2 medium onion, chopped
- 2 cloves garlic, smashed
- 1/2 cup beef broth
- 1 Tbsp Worcestershire sauce
- 1 Tbsp fresh thyme leaves
- salt and fresh cracked pepper to taste

- Pavlova Ingredients:
- 6 egg whites, room temperature
- 1.5 cups granulated sugar
- 2 tsp corn starch
- 1/2 Tbsp lemon juice
- 1/2 Tbsp vanilla extract
- Sugared Cranberries:
- 1/3 cup cranberries
- 1/2 cup + 3 tbsp sugar
- 1/2 cup water
- Marbled Mascarpone Cream:
- 1/3 cup cranberries
- 1/3 cup pomegranate arils
- 1 tbsp sugar
- 1/2 cup orange or apple juice
- 1 cup whipping cream
- 1/2 cup mascarpone cheese
- 1 tsp vanilla extract
- rosemary sprig and pomegranate arils to garnish

- 1/4 cup half and half
- 1 cup milk (cows, soy, coconut, or almond)

This recipe would have been much easier if I had used a bag of caramels, instead of making homemade caramel sauce
- Salted Caramel and Chocolate Chunk Bars
- makes about 14-16 bars
- for the caramel sauce
- 1/2cup1/2 cup heavy cream
- 3Tablespoons3 Tablespoons unsalted butter, cut into about 6 pieces
- 1/2teaspoon1/2 teaspoon vanilla extract
- 1cup1 cup granulated sugar
- 1/2teaspoon1/2 teaspoon salt
- 1/4teaspoon1/4 teaspoon (or just a squirt) of lemon juice
- 1/4cup1/4 cup water
- method
- stand directly over the pan). Keep stirring until the caramel smooths out. Gradually add the pieces of butter, about 2 bits at a time. Once all the butter has been added and has melted into the caramel, whisk in the vanilla extract.
- Immediately pour the hot caramel into a medium heat-proof bowl. Set the bowl aside, stirring occasionally, as you prepare the bars.
- for the bars
- 2 1/8cups2 1/8 cups all-purpose flour
- 1/2teaspoon1/2 teaspoon salt

- 12Tablespoons12 Tablespoons (that's 1 1/2 sticks) unsalted butter, melted and cooled to room temperature
- 1cup1 cup brown sugar (light or dark)
- 1/2cup1/2 cup granulated sugar
- 11 egg
- 11 egg yolk
- 2teaspoons2 teaspoons vanilla extract
- 8ounces8 ounces dark chocolate, coarsely chopped (or roughly 1 generous cup of chocolate chips)
- Caramel sauce (see recipe above)
- Coarse sea salt (optional)
- method
- Preheat the oven to 325 F. Lightly spray, or butter, an 11 x 7-inch glass Pyrex dish. (A 2-quart baking pan.)
- In a large mixing bowl, whisk together the flour, salt, and baking soda; Set aside.
- e vanilla and beat for about one minute more.
- Slowly add the dry ingredients, and mix on low speed just until all the white streaks of flour have disappeared.
- Using a large wooded spoon or a rubber spatula, stir in the chocolate until evenly dispersed throughout the batter.
- Bake the bars for about 30-40 minutes, or until the edges begin to pull away from the pan and the top layer of dough is a light golden brown. [Note: The edges of my bars were much puffier than the middle, but the taste was still phenomenal.)
- Remove the pan from the oven and place on a cooling rack. Cool completely before slicing. Once the bars are room temperature, stick the pan into the fridge for a few hours, this will make the slicing process much easier!

- 3 boneless skinless chicken breasts, pounded to 1 inch thickness and chopped into 1.5 inch pieces + salt and pepper to taste
- 2 teaspoons oil
- 1-2 tablespoons taco seasoning
- 1 1/2 cups bell peppers (I used a combination of red and green)
- 4 cups chicken broth
- 8 ounces cream cheese, softened and cut into cubes
- 1/4 cup cold water + 3 tablespoons corn starch
- 1 cup canned or frozen corn
- 2 cans black beans
- 2 roma tomatoes, diced or chopped
- 1 cup shredded cheese (cheddar, colby jack, monterey jack, or Mexican blend)
- 2 teaspoons cumin
- 1 1/2 teaspoons onion salt
- 1/2 teaspoon garlic salt
- 1 teaspoon garlic powder
- 1 teaspoon chili powder (or to taste)
- 1 teaspoon paprika
- 1 teaspoon salt
- optional: 1 medium avocado sliced, cilantro, additional tomatoes, fresh limes, other desired toppings
