Instructions Pre-heat oven to 450 F
- 1 cup refried black beans
- 1 cup sweet potato puree, homemade or canned*
- 1 cup grated cheese
- 8 corn tortillas
- Olive oil
- 1 large avocado, diced
- 1 tomato, small diced
- 1/4 cup chopped red onion
- 1 clove garlic, minced
- 1 tablespoon chopped cilantro
- Juice of 1 lime
- Salt, to taste
Very Berry Orange-Oat Muffins

Preheat oven to 400° F. Lightly coat 12 muffin cups with cooking spray
- 1/2 cup rolled oats
- 1 1/2 cups whole-wheat pastry flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp ground cardamom
- 1/4 tsp salt
- 1/2 cup reduced fat sour cream
- orange rind
- 1/2 cup orange juice
- 1/2 cup granulated sugar
- 1/4 cup canola oil
- 1 whole egg
- 1 cup blueberries (fresh or frozen)
- 1/2 cup dried cranberries

Instructions Whip sour cream, sugar, greek yogurt and cool whip together until well combined
- 4 packs unflavored gelatin or 8 tsp unflavored gelatin
- 1/2 cup water
- 1 1/2 whole milk
- 1 1/2 cups sugar

- 8-16 oz Cool Whip topping
- 8 oz. Greek unflavored or Vanilla yogurt
- 2 tsp vanilla extract

- lemon zest optional for lemon flavor - zest of 1 lemon

- 1 cup all purpose flour
- 1 Tbsp brown sugar
- 1/4 tsp salt
- 5 Tbsp butter
- CREAM CHEESE FILLING:
- 8 oz package of cream cheese room temperature
- 1/2 cup powdered sugar
- 2 tsp vanilla paste (or extract)
- WALNUT LAYER:
- 1 cup butterscotch, room temperature. (I used homemade, see post for link to my favorite butterscotch recipe)
