To make the dough: 1In a food processor, stir together the flour and salt
- 2 cups all-purpose flour

- 3/4 cup (1 1/2 sticks) very cold unsalted butter, cut into cubes

- 2 to 2 1/2 pounds boneless beef short ribs, cut into 3-inch cubes

- 2 small yellow onions, halved, thinly sliced, then coarsely chopped
- 2 celery stalks, finely chopped
- 4 garlic cloves, minced
- 3 tablespoons tomato paste
- 2 cups brown ale or lager beer
- 1 1/2 cups chicken broth
- 2 fresh thyme sprigs
- 1 fresh rosemary sprig
- 3 medium carrots, peeled and cut into 1-inch pieces
- Flour, for dusting the work surface
- 1 large egg beaten with 1 teaspoon water
- Flake salt, for sprinkling (optional)

Thai Sweet Chilli Chicken Noodle Bowls

Skip the takeout and toss together these healthy Thai Sweet Chilli Chicken Noodle Bowls instead
- 1 tbsp melted coconut oil
- 4 bone-in, skinless chicken thighs (see note)
