Raspberry Almond Shortbread Thumbprints

Combine butter, sugar and 1/2 teaspoon almond extract in large bowl
- Cookie
- 1 cup Land O Lakes® Butter, softened
- 2/3 cup sugar
- 1/2 teaspoon almond extract
- 2 cups all-purpose flour
- 1/2 cup raspberry jam*
- Glaze
- 1 cup powdered sugar
- 2 to 3 teaspoons water
- 1 1/2 teaspoons almond extract
Fresh Lemon Coconut Bars

Method: Base: Preheat oven to 350 degrees F
- Ingredients:
- Makes one 9-inch square pan full of addictive yummyness!
- 1 cup All-purpose flour
- 1/2 cup Butter, softened
- 1/4 cup Powdered sugar
- 1 tbsp Lemon juice
- 1 cup Granulated sugar
- 2 Large eggs
- 2 tsp Grated lemon peel
- 2 tbsp Lemon juice
- 1/2 tsp Baking powder
- 1/4 tsp Salt
- 1/2 cup Shredded and sweet coconut
- Dusting Powdered sugar
Chicken Broccoli and Rice Casserole

Preheat the oven to 350 degrees
- 2 cups of cooked rice
- 3 cups of chopped broccoli, cooked
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 tablespoon of fresh lemon juice, optional
- 1 (10 ounce) can of cream of celery soup
- 1-1/2 cups of grated Cheddar cheese, divided
- 1/4 teaspoon garlic salt
- 15 turns of the pepper grinder
- 4 cups of shredded cooked chicken
- may use fresh green beans instead
Pineapple Sheet Cake

Cake: Mix all together until smooth
- 2 cups AP flour
- 2 cups sugar
- 2 tsp. baking soda
- 1/4 tsp. salt
- 2 eggs
- 20 ounce can (about 2 cups) crushed pineapple, in juice, don’t drain
- 1 tsp. vanilla
- 1/2 cup nuts- I left out due to allergies
- Icing
- 8 ounces cream cheese
- 4 T. butter
- 3 cups confectioners sugar
- 1 tsp. vanilla
- 1/2 cup nuts- optional

Colorful and festive, these Italian Easter Egg Cookies can be made for any holiday
- COLORED GLAZE:
- 1/2 cup butter, room temperature
- 3/4 cup sugar
- 3 eggs
- 1 1/2 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1/4 cup milk
- 1/4 cup canola oil
- 3 3/4 cup flour
- 5 teaspoons baking powder
- Pinch of salt
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 3 to 4 tablespoons of milk
- Food coloring
- Candy rainbow sprinkles, colored or chocolate, we use both

In a medium bowl, combine corned beef, cream cheese, Swiss cheese, sauerkraut, sour cream, ketchup and mustard
