Classic Peanut Butter Cookies

Cream together butter, peanut butter and sugars
- 1 cup unsalted butter
- 1 cup crunchy peanut butter
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 eggs
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons baking soda
- Note - I used 1/2 butter and 1/2 coconut oil. and ground flax seed and water as an egg substitute. cookies were awesome!
The Best Banana Bread

the banana bread: I mix all the wet ingredients together with a potato masher so the bananas will get really mush...
- then add:
- 6 really ripe bananas
- 4 eggs
- 1 cup softened butter or margarine (I use butter)
- 1 TBS vanilla
- 2 cups sugar
- 2 tsp baking soda
- 1 tsp salt
- 2.5 cups plain flour (I use king arthur unbleached bread flour)
- 2 cups chopped nuts- either walnuts or pecans do best.
Lemon Ice Cream Tart with Gingersnap Crust

I’LL ADMIT that Nigel Slater’s Lemon Ice Cream Tart is a little weird
- For the crust:
- Adapted from Nigel Slater’s The Kitchen Diaries (Viking; 2005)
- Ingredients for at least 8 servings
- 10 Tablespoons unsalted butter, melted
- 14 oz gingersnap cookies
- For the filling:
- 2/3 cup white wine
- 2 generous tablespoons brandy
- grated zest and juice of 2 lemons
- grated zest of an orange
- 5 tablespoons superfine sugar
- 2 cups heavy cream
FRIED RICE (ADD SHRIMP OR CHICKEN FOR COMPLETE MEAL!)

On medium high heat, heat the oil in a large skillet or wok
- 3 cups cooked white rice
- 3 tbs sesame oil
- 1 cup frozen peas and carrots (thawed)
- 1 small onion, chopped
- 1 tsp minced garlic
- 2 eggs, slightly beaten
- 1/4 cup soy sauce

- 1 can of whole corn- drained
- 1 can of creamed corn
- 3 eggs
- 1 tsp vanilla
- 1 can condensed milk
- 3 tbsp plain flour
- 1/2 cup sugar

Lemon Yogurt Bars

Preheat oven to 400 F. Cut in half lengthwise and place both halves on an ungreased baking sheet
- 1/2 (17 ounce package) ready-to-bake sheet frozen puff pastry, thawed
- 1 cup confectioner's sugar
- 1/2 cup cornstarch
- 2 large egg yolks
- 2 tablespoons sugar
- 1 teaspoon pure vanilla extract
- 1 cup fat-free milk, divided
- 3 cups low-fat or fat-free lemon yogurt, divided
- 1 tablespoon lemon zest
- 1 cup confectioner's sugar
- 1 1/2 cups fresh blueberries, or raspberries
Slow Cooker Santa Fe Chicken

Combine the black beans, corn, and 1/2 cup salsa in a slow cooker
- 1 (15 ounce) can black beans, drained
- 1 (14 ounce) can whole kernel corn
- 1/2 cup salsa
- 4 skinless, boneless chicken breast halves
- 1/2 cup salsa
- 1 (8 ounce) package cream cheese, cut into cubes
- 8 tortillas
Paleo Mac and Cheese Recipe

Instructions Cut the stalks and leaves off of the cauliflower and break it into small pieces
- 1 1/2 heads Cauliflower
- 2 T. Grass-fed Butter or coconut oil
- 1/2 t. Real Salt
- 1/4 C. Water
- 2 T. Grass-fed Butter or coconut oil
- 1 small Yellow Squash (Summer squash), cut into small cubes
- 1 small Carrot, peeled and diced
- 1/2 Small Sweet Onion, diced
- 1/2 t. Garlic Powder
- 3/4 t. Ground Mustard
- 1 t. Real Salt
- 1 can Coconut Milk
- 1 Egg Yolk
- Pepper, to taste
CHEESEBURGER DIP

Instructions Cook onion and ground beef together in medium skillet until ground beef is cooked completely
