The Best Banana Bread

the banana bread: I mix all the wet ingredients together with a potato masher so the bananas will get really mushy (technical term, lol) then add the dry one at a time mixing after each one and stir in the nuts last just before you put it in the pans. 6 really ripe bananas 4 eggs 1 cup softened butter or margarine (I use butter) 1 TBS vanilla then add: 2 cups sugar 2 tsp baking soda 1 tsp salt 2.5 cups plain flour (I use king arthur unbleached bread flour) 2 cups chopped nuts- either walnuts or pecans do best. should be a nice thick batter, but if it is real stiff I add an extra egg to give it more moisture. - spray pans -bake at 350 til tooth pick comes out clean. 8-small loaf pans take about 30 min 2 - 8" loaf pans take about 50 min. you can use applesauce instead of butter and eggbeaters instead of eggs to make a lower calorie version which is very good also. can also use whole wheat flour or mix it half n half with the white flour.
