CHOPPED SALAD

1. For salad, toss together ingredients in a large bowl and chill in refrigerator 2
- DRESSING:
- 1 teaspoon garlic, minced
- 2 teaspoons shallots, minced
- 2 tablespoons Dijon mustard
- 1 1/2 teaspoons dried oregano
- 2 teaspoons dried parsley
- 1/2 tsp ground black pepper
- 1/4 tsp kosher salt
- 1/4 cup red wine vinegar
- 1 1/3 cup olive oil, mild flavored
- 3 TBSP parmesan cheese, grated
- SALAD:
- 1/2 head iceberg lettuce, chopped into 1/8 inch wide strips
- 1/2 head romaine lettuce, chopped into 1/8 in wide strips
- 12 leaves basil, chopped into fine strips
- 3 cups mozzarella cheese, shredded
- 1 cup garbanzo beans
- 4 cups tomatoes, seeded and diced
- 3 cups turkey breast, diced
- 1/2 cup salami, cut into thin strips
- 2 TBSP scallions, chopped
YUMMY CHICKEN

Mix flour, salt, pepper and thyme in a plastic bag
- 1/4 cup flour
- 1/2 tsp salt
- 1/4 tsp pepper
- Dash of thyme
- 1/4 cup melted butter
- 3-4 lbs cut up chicken
- 4 green onions, chopped
- 1/2 cup sliced mushrooms
- 2 TBSP lemon juice
- 1 tsp sugar
- 1/2 tsp salt
- 1/3 cup apple juice
DIVINITY

Combine sugar, corn syrup, water and salt in saucepan
- 2 2/3 cups sugar
- 2/3 cup light corn syrup
- 1/2 cup hot water
- 1/4 tsp salt (optional)
- 2 stiff-beaten egg whites
- 1 tsp vanilla
- 1/2 cup nuts, chopped
COFFEE NUDGE MIX

Mix all bottles together. Pour one jigger of mix into hot coffee
- 1 bottle Kahulua
- 1 bottle Creme de Cacao
- 1 bottle Brandy
Pickled Beets

Wash beets, trim tops leaving about 2 inches and root on beet
- SYRUP:
- 10 pounds fresh beets
- 2 cups cider vinegar
- 4 cups white vinegar
- 3 cups water
- dash salt
- 5 cups sugar
- 3 cinnamon sticks
- 1 teaspoon allspice
- 8 whole cloves
TOMATO, MOZZARELLA, BASIL SALAD

Arrange slices of tomato, top with mozzarella and basil
- Fresh tomatoes, sliced
- Mozzarella cheese, slices
- Fresh basil
- Extra virgin olive oil
- Balsamic vinegar (aged

- Fresh ground pepper
CREAM CHEESE FROSTING

- 1 pkg (8 oz) cream cheese, softened
- ½ cup butter, softened
- 2 tsp. Vanilla
- 4 cups powdered sugar.
CHICKEN ENCHILADA DIP

Layer ingredients in a baking dish Bake at 350 degrees for 30 minutes Serve with tortilla chips
- 1 package cream cheese
- 2 chicken breasts, cooked and cut up
- 1/2 cup Franks hot sauce
- 1 cup ranch dressing
- Grated cheddar cheese
BLUEBERRY MUFFINS

Beat egg with fork. Stir in milk and oil
- 1 egg
- ½ cup milk
- ¼ cup vegetable oil
- 1 ½ cup flour
- ½ cup sugar
- 2 tsp. Baking powder
- ½ tsp salt
- 1 cup blueberries
AUNT BETTY’S CARROT CAKE (aka 18 Carrot Cake)

- 2 1/2 cups flour
- 1 1/4 tsp baking powder
- 1 tsp baking soda
- 1 1/4 tsp ground cinnamon

- 1 pound (6-9 medium carrots) peeled
