ORANGE CHILI CHICKEN

DIRECTIONS: 1. In large bowl, mix chicken with vegetable oil, garlic, ginger, salt and pepper
- CHICKEN:
- 3 lbs chicken breasts (8 large cut in half or can use 2 inch pieces)
- 1/4 cup vegetable oil
- 2 cloves garlic, chopped
- 1 TBSP ginger, fresh, chopped
- 2 TBSP extra virgin olive oil
- Salt and freshly ground black pepper
- ORANGE CHILI SAUCE:
- 1 cup freshly squeezed orange juice
- 1/2 cup frozen orange juice concentrate, thawed
- 2 cups sweet chili sauce
- Zest of 2 oranges, minced
- Salt
- JASMINE RICE
- 1 1/2 cups jasmine rice
- 1 1/2 cups cold water
- GARNISH:
- 4 large (1 green, 1 red, 1 orange, 1 yellow) bell peppers, julienned and placed in ice water
- 1 large carrot, julienned and placed in ice water
- 1 large leek, julienned and placed in ice water (white parts only)
- 1/3 cup alfalfa sprouts
- 1/2 pound snow peas
- 2 TBSP unsalted butter
CRANBERRY JELLO

Mix together Jello and water
- 2 (3 ounce) packages Raspberry jello
- 1 cup hot water
- 1 can whole berry cranberry sauce
- 1 cup nuts
- 1 pt sour cream
- 1 large can crushed pineapple, drained
FRENCH GREEN BEANS

CALICO BEANS

Brown hamburger, bacon, onions and green pepper
- 1/2 lb hamburger
- 1/2 lb bacon, chopped into pieces
- 1 cup onions, chopped
- 1/2 cup green bell pepper, diced
- 1/2 cup ketchup
- 1 tsp salt
- 1 tsp dried mustard
- 2 Tbsp vinegar
- 3/4 cup brown sugar
- 1 can pork and beans
- 1 can kidney beans
- 1 can butter or lima beans
STRAWBERRY ANGEL FOOD SALAD

Dissolve jello in 1 1/4 cup boiling water
- 1 small package strawberry jello
- 10 oz package frozen strawberries, thawed
- 1 Tbsp sugar
- pinch of salt
- 1/2 of 10 inch angel food cake
- 1/2 container of cool whip
SEASIDE CANDY ROLL

- 1/3 cup Karo syrup (light)
- 1/2 cup margarine or butter
- 1 tsp maple flavoring
- 1/2 tsp salt
- 1 lb powdered sugar (4 cups)

- 4-5 TBSP vegetable oil
- 4 cup thinly sliced onions separated into rings (white-approx 2-3)
- 1 lb fresh mushrooms, thinly sliced lengthwise
- 2 lbs fillet of beef, trimmed of all fat (boneless round steak)
- 1 tsp freshly ground black pepper

ALMOND TOFFEE

- 1 lb butter
- 2 cups sugar
- 1 heaping cup unsalted almonds
- 12 oz package semi-sweet chocolate chips
- chopped pecans or walnuts
PATCHWORK SALAD

SALAD: Combine all the vegetables together, pour dressing over the top
- SALAD:
- 14 1/2 oz can French style green beans, drained
- 15 1/4 oz can corn, drained
- 15 1/4 oz can peas, drained
- 1/2 green pepper, chopped
- 2 oz jar pimentos, drained
- 4 stalks celery, chopped
- 1/2 onion, chopped
- DRESSING:
- 1 1/2 cup sugar
- 1/2 cup oil
- 1 cup white vinegar
- 1 tsp salt
- 1/4 tsp pepper
VANILLA CRÈME BRULEE

- 6 large egg yolks
- 6 tablespoons sugar
- 1 vanilla bean, split lengthwise
- 1 1/2 cups whipping cream
- 6 teaspoons granulated sugar (or 8-12 teaspoons packed brown sugar)
