  • 2 2/3 cups sugar
  • 2/3 cup light corn syrup
  • 1/2 cup hot water
  • 1/4 tsp salt (optional)
  • 2 stiff-beaten egg whites
  • 1 tsp vanilla
  • 1/2 cup nuts, chopped



Step 1

Combine sugar, corn syrup, water and salt in saucepan. Cook over high heat until sugar is melted. Turn heat to medium and let cook until soft crack stage (will be stringy). During this cooking time, whip egg whites until stiff. Slowly pour syrup in a thin stream over beaten egg whites, beating constantly. Beat until mixture holds shape (usually takes 10- 15 minutes). Add vanilla and nuts at very end to mix. Drop by heaping teaspoons on waxed paper.
