Fried Cabbage with Polish Sausage

Fried cabbage and polish sausage is a quick and easy supper and makes a meal served with cornbread
- 3 tablespoons bacon grease
- 1 small head of cabbage, chopped
- 1 small onion, chopped
- 1/2 of red pepper, if you'd like
- 1 pound polish sausage, sliced into round pieces (I use smoked sausage)
- 1 (15-ounce) can diced tomatoes
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- Few drops of hot sauce, optional

A lemon lover's DREAM
- 1 cup graham cracker crumbs
- 1 3/4 cups splendagranulated sweetener, divided
- 2 TLBS. Margine or butter
- 2 Cups plain nonfat yogurt
- 1/3 cup lemon juice ( about 1 to 1 1/2 lemons)
- Zest of one Lemon
- 1/2 teaspoon lemon extract
- 1 cup light whipped topping
Spiced Hot Chocolate

Combine cocoa, nutmeg and chili powder
- 4 cup(s) prepared hot cocoa with 1% milk
- 1/2 teaspoon(s) freshly grated nutmeg
- 1/2 teaspoon(s) chili powder
- 4 cinnamon sticks
San Antonio Rice

Add a Southwest kick to your rice
- 1 cup uncooked long-grain rice
- 1 12-ounce jar fresh salsa, mild or hot
- 1 tablespoon vegetable oil
- 1 cup fresh or canned corn kernels
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- - Fresh ground black pepper to taste
- 1 1/4 cups water
- - Minced fresh cilantro, for garnish (optional)
Crockpot Orange Chicken

Put carrots, peppers, garlic, then the chicken, ginger, salt, pepper & frozen orange juice in Crockpot
- 2 large carrots, peeled and sliced about 1/2-inch thick
- 2 large red or green bell peppers, cut into 1/2-inch chunks
- 3 cloves garlic, finely minced
- 4 boneless skinless chicken breasts
- 2 tsp. ground ginger
- 1 tsp. salt
- 1/2 tsp. pepper
- 8 ounces orange juice concentrate
- 2 cups Mandarin orange segments or fresh orange segments
- 2 Green onions, chopped
- hot cooked rice
JELL-O Pudding Pops

1. Beat pudding mix & milk in medium bowl with whisk for about 2min
- 1 package JELL-O Sugar-Free Pudding (your choice of flavor)
- 2 cups Fat-Free Milk

Chicken Avocado and Monterey Jack Nachos

Serves 6 - 8
- 1 large bag of corn tortilla chips
- 1 cup grated Monterey Jack cheese
- 2 cups grated Pepper Jack cheese
- 2 cups shredded cooked chicken
- 2 avocadoes, diced and peeled
- 2 green onions, sliced on the bias
- 1 jar tomato salsa or your home-made salsa
- 1 cup sour cream (optional)
Ham & Cheese Pretzel Bites

Combine the yeast, 1 tsp brown sugar, and warm water in a large bowl
- 1 package (1/4 oz) active dry yeast (or instant yeast)
- 2 Tablespoons plus 1 teaspoon packed brown sugar, divided
- 1/4 cup warm water (110-115˚F)
- 1 cup warm milk (110-115˚F)
- 2 1/2 to 3 cups flour
- 1/2 cup finely chopped ham (about 3 ounces)
- 1/2 cup shredded cheese of choice (I used cheddar)
- 6 cups water
- 4 teaspoons baking soda
- 4 Tablespoons unsalted butter, melted
- 1-2 Tablespoons coarse salt
