Barry Goldwater Beans

Soak the beans in cold water overnight
- 2 pounds pinto beans
- 2 large onions, chopped
- 4 cloves garlic, chopped
- 2 teaspoons salt
- Pepper, to taste
- 1/2 teaspoon cumin seed
- 1 (4 ounce) can taco sauce
- 1 (4 ounce) can roasted green chiles
- 1 (2 1/2 pound) can tomatoes
- 2 pounds ground beef, browned (optional)
Double Cinnamon French Toast

Bring syrup, 1 Tbsp. butter and 1 tsp
- 1 cup pure maple syrup
- 3 Tbsp. unsalted butter
- 2 tsps. ground cinnamon
- 3 large eggs
- 1 cup whipping cream or half and half
- 2 tsps. vanilla extract
- 4 3/4 -to 1-inch-thick cinnamon bread or egg bread slices
Orange Fennel Salad

Cut the fronds from the fennel bulbs and reserve some of the feathery leaves for later
- 2 pounds fennel bulbs
- " 3 to 4 oranges
- " 1/4 cup good olive oil
- " 2 lemons, juiced
- " Kosher salt
- " 1/4 teaspoon freshly ground black pepper
- " 2 ounces arugula
- Optional: Walnuts or pecans make a nice addition to this salad
Crockpot Chicken Enchilada

Cook chicken and shred. Mix soup, olives and onions
- 1 Lg. can Enchilada sauce
- 4 chicken breasts
- 2 cans cream of chicken soup
- 1 sm. can sliced black olives
- 2 dozen corn tortillas
- 1 chopped onion
- 1 pkg sharp cheddar cheese
Jo's Baked Garlic Soup

Generously butter inside of 3-quart baking dish
- 2 c Diced fresh tomatoes
- 15 oz Garbanzo beans, undrained (or you might prefer to use navy beans)
- 4 Or 5 summer squash, sliced
- 2 lg Onions, sliced
- 1/2 Green pepper, diced in cups
- 4 Or 5 cloves fresh garlic,
- 1 Bay leaf
- 2 ts Salt
- 1 ts Basil
- 1 Bay leaf
- 1 1/4 c Grated Monterey Jack cheese
- 1 c Grated Romano cheese
- 1 1/4 c Heavy cream or whipping
Red Bliss Potato Salad

Preheat oven to 400°. Toss potatoes with 2 Tbsp
- 2 pounds small Red Bliss potatoes, quartered
- 5 tablespoons olive oil, divided
- Dressing
- 2 tablespoons Champagne vinegar
- 1 teaspoon fresh lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground pepper
- 1 small shallot, minced
- 3 tablespoons vegetable oil
- 2 tablespoons crème fraîche
- 2 tablespoons chopped fresh chives
- Kosher salt and pepper to taste
Mock Orange Julius

- 3 oranges
- 1/2 cup shaved or chopped ice
- 1 (1.2 oz) envelope from package of vanilla flavored breakfast drink mix
Toll House Chocolate Chip Cookies

PREHEAT oven to 375° F. COMBINE flour, baking soda and salt in small bowl
- • 2 1/4 cups all-purpose flour
- • 1 teaspoon baking soda
- • 1 teaspoon salt
- • 1 cup (2 sticks) butter, softened
- • 3/4 cup granulated sugar
- • 3/4 cup packed brown sugar
- • 1 teaspoon vanilla extract
- • 2 large eggs
- • 2 cups (12-oz. pkg.) Semi-Sweet Chocolate Morsels
- • 1 cup chopped nuts
Macaroni Salad

In a large bowl combine the macaroni, celery, onion, parsley and tomato, if using
- 2 cups dry elbow macaroni, cooked, rinsed, and drained
- 1/3 cup diced celery
- 1/4 cup minced red onion, soaked in cold water for 5 minutes, drained
- 1 tablespoon minced flat-leaf parsley
- 1/2 cup diced vine-ripened tomato (optional)
- 1/2 cup prepared mayonnaise
- 3/4 teaspoon dry mustard
- 1 1/2 teaspoons sugar
- 1 1/2 tablespoons cider vinegar
- 3 tablespoons sour cream
- 1/2 teaspoon kosher salt, plus more to taste
- Freshly ground black pepper
Minnesota Heartland Soup

11-Bean Soup Recipe Rinse, drain and pick over beans
- 11-Bean Soup Mix Ingredients:
- Dried beans, peas, lentils, and bouquet garni of herbs.
- (This is a brand bean soup mix, but other dried bean combinations can be used)
- 12 cups water
- 2 (plus) cloves of garlic, minced
- 1 tablespoon salt
- freshly ground pepper
- 1 smoked ham hock (can substitute smoked turkey leg)
- 1 28-ounce can Italian tomatoes, chopped
- 1 pound smoked kielbasa sausage, sliced on a diagonal
- (can substitute chicken sausage)
- 2 cups celery, sliced
- 2 cups onion, chopped
- 1 or 2 whole chicken breasts, sliced into small pieces while raw or slightly frozen
- 1 green pepper, chopped
