Italian Spaghetti Sauce

This is one of my oldest recipes -- from my Better Homes and Garden Cookbook
- 1/2 cup onion slices
- 2 Tbsp olive or salad oil
- 1 # ground beef
- 2 cloves garlic, minced
- 4 cups tomatoes (2 - 1 lb cans)
- 2 - 8 oz cans (2 cups) tomato sauce)
- 1 cup mushrooms (fresh are best -- add later)
- 1/3 cup chopped parsley
- 1 1/2 tsp oregano or sage ((I use more)
- 1 tsp salt
- 1/4 tsp thyme
- 1 bay leaf
- 1 cup water

Preheat oven to 350 degrees
- 3 1/2 cups flour
- 2 tsp soda
- 1 1/2 tsp salt
- 3 cups sugar
- 1 cup vegetable oil
- 4 eggs
- 1/2 cup water
- 2 cups canned pumpkin (505 cans)
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1 cut dates
- 1 cup nuts

- • 1/4 cup extra-virgin olive oil
- • 1 large clove garlic crushed
- • 1 pound baby potatoes
- • 1 small onion
- • 3 to 4 sprigs fresh rosemary, finely chopped
- • Salt and freshly ground black pepper
- • 12 eggs, beaten
- • 1/2 cup milk, half-and-half or cream
- • 1/2 cup Parmigiano-Reggiano
Ugly Dip

Mix, let stand at least 5 hours in refrigerator
- 4 ripe, soft avocados, diced
- 4 firm tomatoes, diced
- 4 small cans diced black olives
- 4 small cans green chilies, chopped
- 8 green onions, cut fine
- 2 1/2 2 ½ ounces oil
- 2 1/2 2 ½ ounces lemon juice
Mandarin Orange Cake

Mix first five ingredients together with mixer
- 1 Duncan Hines Butter Golden Cake mix
- 4 eggs
- 1/2 C oil
- 1 can manderine oranges (12 oz) plus juice
- 1 package instant vanilla pudding
- 1 8 oz can crushed pineapple
- 1 large container Cool Whip
- 1 C powdered sugar
Crockpot Stuffed Bell Peppers

Heat shortening in skillet and brown beef
- 6 green peppers washed, topped and seeded
- 1 Tbs. shortening (i.e. Crisco)
- 1 1/2 - 2 lb. ground beef
- 1 C. cooked rice
- 1 sm. onion, chopped
- 1 tsp. salt
- 1/8 tsp. black pepper
- dash of basil
- ■1/2 C. ketchup
- ■1 8-oz. can tomato sauce w/ or w/o seasoning
BLT Chopped Salad Slippers

- 4 thick slices bacon, finely chopped1/3 cup mayonnaise
- o 1/2 tablespoon sherry vinegar
- o 2 teaspoons grainy mustard2 plum tomatoes, finely chopped

- o 1/3 cup chopped pecans, toasted

- 1 1/2 cups chopped onions

- 1 cup shredded cheddar cheese
Party Quesadillas

- 1/2 lb. cooked chicken or pulled pork
- 1 8 oz. bag low or no-fat shredded Mexican cheese blend
- 1 lg. white onion, sliced
- 1 clove garlic, minced
- 8 tortillas
- sauteed mushrooms and peppers (optional)
- sour cream and salsa for serving

- cooking spray
Kung Pao Chicken

Dice the chicken into 1 in
- 12 oz. boneless chicken breasts (about 3 halves)
- 1 dried red chili
- 1 1/2 Tbs. peanut oil
- 1/3 C. shelled peanuts
- 2 Tbs. water
- 2 Tbs. dry sherry
- 1 Tbs. soy sauce
- 1 Tbs. chili bean sauce
- 1 tsp. sugar
- 2 garlic cloves, minced
- 2 scallions, chopped
- 1 tsp. grated ginger
- 2 tsp. rice or cider vinegar
- 1 tsp. sesame oil
