Place the chicken in a large shallow bowl or baking dish
- 3 pounds boneless, skinless chicken breasts, cut into cubes for skewers
- 1/4 cup soy sauce
- 1/4 cup orange juice
- 2 tablespoons vegetable oil
- 1/2 teaspoon red pepper flakes, crushed
- 1 garlic clove, minced
- 1/4 cup peanut butter
- 2 tablespoons minced onion
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground ginger
- 1/4 cup chopped fresh cilantro
Chicken, Buttermilk, Unfried

- 1 cup buttermilk
- 1 tablespoon hot sauce, such as Louisiana Hot Sauce
- 4 boneless, skinless chicken breasts, cut in half
- Kosher salt and black pepper
- 1 1/2 cups multi-grain panko breadcrumbs
- 3 tablespoons grated Parmesan
- 1 lemon, quartered, plus 1 tablespoon lemon zest
- 1 teaspoon red pepper flakes
Mint Pie, After Dinner

Combine crumbs and margarine
- 2 cups (24) crushed cream filled chocolate cookies
- 1/4 C melted margarine
- 1/4 C. Milk
- 1 7 oz jar marshmallow cream
- Few drops peppermint extract
- Few drops food coloring - green
- 2 cups whipped whipping cream
Cordon Bleu, Quick with Crescent Rolls

Preheat oven to 375. Separate crescent rolls into 8 triangles
- Ingredients
- 1 can crescent rolls
- 4 tsp honey mustard dressing
- 4 slices baby swiss cheese
- 8 slices deli ham
- 8 fully cooked, frozen breaded chicken fingers (Tyson)
Singapore Sling

Mix together. Add a bit of red food coloring
- 1/2 cup lemon juice
- 1/2 cup lime juice
- 1/2 cup brandy
- 1 1/4 cup gin

Pasta e Fagioli

1. Add olive oil to a large skillet and add in ground beef
- 1 tablespoon extra virgin olive oil
- 1 pound lean ground beef
- 2 whole carrots, diced
- 4 celery stalks, diced
- 1 medium onion, diced
- 28 ounce can crushed tomatoes
- 2 cans (14.5 ounces each) beef broth
- 2 whole bay leaves
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- salt and pepper to taste (I added 1 tsp salt and 1/4 teaspoon pepper)
- 1 can (15 ounces) cannellini beans, drained and rinsed
- 1 can (15 ounces) red kidney beans, drained and rinsed
- 1 cup ditalini pasta, uncooked
Jicama Appetizer

In a small bowl, place sour cream, lime zest and juice, chili powder, and chopped scallions
- " 1/2 cup reduced-fat sour cream
- " Zest and juice of 1 lime
- " 1/2 teaspoon chili powder
- " 2 scallions, finely chopped, plus more, thinly sliced for garnish, if desired
- " Coarse salt and ground pepper
- " 1 1/2 pounds jicama (1 medium), cut into sticks
Instant Reuben Casserole

Lightly grease an 8 or possibly 9-inch square baking dish
- 1 Tbsp. Dijon mustard
- 4 skuces Rye bread
- 12 ounce corned beef brisket canned
- 1 lb sauerkraut liquid removed
- 1 can condensed tomato soup (10 3/4-ounce)
- 1/4 c. Water
- 3 Tbsp. Pickle relish (not sweet)
- 4 slices Swiss cheese (1-ounce each) cut into 1/2-inch
Winter Fruit Salad

- 8 oranges
- 4 grapefruit, preferably pink
- 1 pineapple
- 6 kiwis
- 1 1/2 cups pomegranate seeds, optional
