quickbread - Healthy Banana Bread

Grease two 8 inch loaf pans or a 10 inch loaf pan
- 2 large eggs
- 1/2 cup honey (or maple syrup, sugar, or other sweetener)
- 3/4 cup unsweetened applesauce
- 1 teaspoon vanilla
- 1 1/2 cup oat flour (or any other type of flour; gluten-free, all-purpose, or whole wheat. I actually used white rice)
- 1/2 teaspoon salt
- 3/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon cinnamon (more or less as you prefer)
- 1 1/2 cups mashed ripe bananas (the ones pictured are not quite ripe enough, I used four smallish brown speckled bananas, mashed well)
- Optional mix-ins (chocolate chips, dried cherries or cranberries, pecans, walnuts, etc.)

Whisk honey into warm water and add yeast
- 2 1/2 teaspoons active dry yeast
- 1 1/2 cups water, about 90 degrees
- 2 tablespoons honey
- 4 oz chickpea / garbanzo bean flour (or sorghum or millet by weight)
- 4 oz toasted quinoa flour
- 3.5 oz sorghum flour
- 5.5 oz potato starch
- 2 teaspoons xanthan gum
- 1 teaspoon fine sea salt
- 3 large eggs, at room temperature
- 3 tablespoons almond oil (or other light flavored oil)
- 2 tablespoons raw white quinoa (optional)
- 2 tablespoons raw sunflower seeds (optional)
- 1 tablespoon poppy seeds (optional)
soup - Gluten Free Cream of Chicken Soup

In large saucepan, melt butter over medium heat
- 6 Tablespoons unsalted butter
- 1/4 cup chopped yellow onion
- 3 1/2 cups gluten free chicken broth (or stock homemade stock)
- 3 1/2 cups whole milk, (or heavy cream, or dairy-free milk), divided
- 5 garlic cloves, minced or grated
- 2 sprigs of parsley, minced
- 1 teaspoon dried thyme
- 1 bay leaf
- 1/4 teaspoon fine sea salt
- 1/8 teaspoon ground white pepper
- 1/16 teaspoon paprika
- 3/4 cup white or brown rice flour

- 8 teaspoons (or 2 Tablespoons + 2 tsp.) dehydrated onions
- 4 Herb-Ox Beef Bouillon Cubes, crushed or ground (I grind mine in a coffee grinder.) (contains soy, yeast and dairy, but no MSG) (see tip below)
- 1 teaspoon potato starch (or cornstarch)
- 1 teaspoon onion powder
- 1/4 teaspoon powdered sugar
- 1/4 teaspoon ground celery seed (I grind the seeds in my coffee grinder.)

Prepare frosting by adding all the ingredients to the food processor and blending together until smooth
- Frosting
- 3/4 cup cashew nut butter
- 4 dates
- 1/2 tsp vanilla extract
- 1/2 tsp rum extract
- 1/4- 1/2 tsp ground nutmeg
- 1/2 a frozen banana (or another 1/4 cup nut butter)
- 1/2 cup firm tofu (water pressed out)
- 3 tbs maple syrup/brown rice syrup/agave nectar
- Pinch of stevia powder (approx. 1/6 tsp or to taste)
- 3 tbs coconut butter melted- if you want a thicker frosting (omit for a soft whippy frosting)

- 10 1/2 oz. firm silken tofu
- 1/3 cup rapadura
- 1/3 cup agave syrup
- 1 tbs vinegar
- 1 tbs water
- 1 tbs vanilla extract
- 1 tbs ground flax mixed with 2tbs hot water
- 1 cup whole wheat spelt flour
- 1/4 cup ground almonds
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1/3 cup unsweetened cocoa powder.

Combine the peas and water in a small saucepan over medium heat
- 1/4 cup Dry Yellow Peas
- 1/2 cup Water
- 1/4 cup Butter, softened
- 2/3 cup Sugar
- 1 tsp. Instant Espresso
- 3/4 cup Multi-Purpose Gluten Free Flour or Cake Flour
- 1/4 tsp. Salt
- 1/4 cup Cocoa Powder
- 1 tsp Baking Powder
- 1 cup Peanut Butter Chips

Preheat your oven to 325°F
- 8 tablespoons (112 g) unsalted butter, at room temperature
- 1 cup (200 g) sugar
- 3 eggs (180 g, out of shell) at room temperature, beaten
- 2 teaspoons pure vanilla extract
- 2 cups (280 g) basic xanthan gum-free gluten free flour blend
- 1/2 teaspoon xanthan gum*
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 2/3 cup (5 1/3 fluid ounces) milk, at room temperature
- 1/4 cup (20 g) natural cocoa powder
- 2 tablespoons (1 ounce) warm water
- You can omit the xanthan gum completely, but the cake will become stale much more quickly after it is baked. If you use an all-purpose gluten-free flour blend that already contains xanthan gum, the batter will be too thick to marble properly.
