Grease two 8 inch loaf pans or a 10 inch loaf pan

  • 2 large eggs
  • 1/2 cup honey (or maple syrup, sugar, or other sweetener)
  • 3/4 cup unsweetened applesauce
  • 1 teaspoon vanilla
  • 1 1/2 cup oat flour (or any other type of flour; gluten-free, all-purpose, or whole wheat. I actually used white rice)
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon (more or less as you prefer)
  • 1 1/2 cups mashed ripe bananas (the ones pictured are not quite ripe enough, I used four smallish brown speckled bananas, mashed well)
  • Optional mix-ins (chocolate chips, dried cherries or cranberries, pecans, walnuts, etc.)

  • 5.5 oz potato starch
  • 2 teaspoons xanthan gum
  • 1 teaspoon fine sea salt
  • 3 large eggs, at room temperature
  • 3 tablespoons almond oil (or other light flavored oil)
  • 2 tablespoons raw white quinoa (optional)
  • 2 tablespoons raw sunflower seeds (optional)
  • 1 tablespoon poppy seeds (optional)

  • 2 cups (280 g) basic xanthan gum-free gluten free flour blend
  • 1/2 teaspoon xanthan gum*
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2/3 cup (5 1/3 fluid ounces) milk, at room temperature
  • 1/4 cup (20 g) natural cocoa powder
  • 2 tablespoons (1 ounce) warm water
  • You can omit the xanthan gum completely, but the cake will become stale much more quickly after it is baked. If you use an all-purpose gluten-free flour blend that already contains xanthan gum, the batter will be too thick to marble properly.
