- 2 large eggs, at room temperature
- 1 large or extra large egg white, at room temperature
- 1 1/4 cups zucchini, grated
- 1/4 cup applesauce
- 1/2 cup milk or dairy-free milk

- 2 cups Gluten-free Cake Flour Blend
- 2 teaspoons ground cinnamon

Preheat oven to 180°C/350°F
- 2 2/3 cups grated carrot (about 300g or 2 large/4 small carrots)
- 1/2 cup unsweetened applesauce
- 1/4 cup egg whites or 1 egg or 1/4 cup applesauce or 1 flax egg
- 1/4 cup milk of your choice
- 1/4 cup honey (I used a little less as I don't like things too sweet - if making this vegan, use sugar or maple syrup)
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp mixed spice
- 1 1/3 cup flour (see list below for options)
- Optional: nuts of your choice (I like walnuts or pecans best!)
