cake - Chocolate Almond Ricotta Cake

Preheat oven to 350. Grease and flour 9x9 or 6 jumbo muffin pan
- 1 (9 ounce) box chocolate cake mix (jiffy)
- 1 egg
- 1 ⁄2 cup cold water
- 1 cup part-skim ricotta cheese
- 1 teaspoon almond extract
- 1 ⁄2 cup sugar

Mix water, eggs, salt, honey, and vinegar in the bottom of your Bread Machine pan
- 7/8 cups Water (Mineral Water gives a slightly better rise but it not necessary) (if you don’t have a measuring cup this accurate, it’s the same as 220mL or you can measure 1 cup and remove 2 Tbsp)
- 3 eggs
- 1 tsp Salt
- 2 Tbsp Apple Cider Vinegar
- 2 Tbsp Honey
- 1/4 cup Extra Virgin Coconut Oil, melted
- 3 cups Blanched Almond Flour
- 3 cups Almond Meal
- 2/3 cup Tapioca Flour
- 2/3 cup Arrowroot Flour
- 2 tsp Active Dry Yeast
Oat Bran Muffins

1.Heat oven to 425° F. 2
- 2 cups QUAKER Oat Bran Hot Cereal, uncooked
- 1/4 cup firmly packed brown sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup fat-free milk or 2% reduced-fat milk
- 2 egg whites, slightly beaten
- 1/4 cup honey or molasses
- 2 tablespoons vegetable oil
- 1 cup raisins
- 1/4 cup chopped walnuts
MILLET CAULIFLOWER CARAWAY “MASHED POTATOES”

In a large saucepan, heat 1/4 cup water
- 1 medium onion, chopped
- 1 cup millet, uncooked - quinoa?
- 4 cups cauliflower
- Add 2 tsp. caraway seeds
- 1/2 tsp. salt

1. Preheat oven to 350 degrees F (175 degrees C)
- 15 gluten free arrowroot/ginger snaps or other kind of cookie, crushed
- 2 tablespoons butter, melted
- 4 (8 ounce) packages cream cheese
- 1 1/2 cups white sugar
- 3/4 cup milk
- 4 eggs
- 1 cup sour cream
- 1 tablespoon vanilla extract
- 1/4 cup all-purpose gluten free flour mix
cookie - No Bake Pumpkin Pie Cookies

In the food processor, grind up the almonds, pecans, pepitas and spices
- 1 cup raw pecans
- 1 cup raw almonds
- 9-10 medjool dates
- 3 T raw pepitas
- 1/2 cup pumpkin (fresh or canned)
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp ginger
- 1/4 tsp ground cloves

Crack the eggs into a medium-sized bowl and whisk in the melted ghee and water
- 2 eggs
- 1 tsp melted ghee (sub: melted coconut oil)
- 1 tbsp water
- 1/4 cup arrowroot powder
- 1 tsp coconut flour
