Banana Bread in an Instant Pot

Banana bread is quick and easy to make in your Instant Pot
- 1 stick butter
- 1/2 cup sugar
- 2 eggs
- 3 mashed bananas
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup nuts, chopped, optional
- 1 cup water

Preheat the oven to 350ºF
- 1 cup sorghum flour
- 1/4 cup GF millet flour (or brown rice flour)
- 1/2 cup tapioca starch/flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon fine sea salt
- 1 teaspoon xanthan gum
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3/4 cup Spectrum Organic Shortening, Earth Balance stick, or organic coconut oil
- 1 1/2 cups light brown sugar
- 1 tablespoon bourbon vanilla
- 2 organic free-range eggs, beaten (or 1 tablespoon Ener-G Egg Replacer whisked with 1/4 cup warm water till frothy)
- 3 to 3 1/2 cups certified gluten-free rolled oats
- 1 cup dark chocolate chips

Mix yeast and sugar in a medium bowl, then add warm water and whisk until sugar is dissolved
- 4 tablespoons Dry Active Yeast
- 4 teaspoons sugar
- 3 cups warm water (110-112 degrees F.)
- 2 tablespoons xanthan gum (or try a substitute for xanthan gum)
- 4 tablespoons olive oil
- 3 cups fine ground white rice flour
- 1 cup fine ground sweet rice flour
- 2 cups tapioca starch
- 1 tablespoons kosher or fine sea salt
- 4 large eggs, lightly beaten
- 2 teaspoons apple cider vinegar
- 4 teaspoons cornmeal
- 4 tablespoons butter, melted

Preheat oven to 350 degrees
- 1/2 cup poppyseeds
- 3/4 cup goat milk
- 3/4 cup Earth Balance vegan “butter”, softened
- 3 large eggs
- 1 tsp gluten free vanilla
- 2 tsp baking power
- 2 cups gluten free flour blend (I like to use Compliments gluten free flour blend that is available at Sobeys and Safeway)
- 1 1/4 cup white sugar

Preheat your oven to 375 degrees
- 2 c brown rice flour
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 c unsalted butter, at room temperature
- 2 eggs
- 1/2 c stevia brown sugar mix
- 1 tbsp dark agave nectar
- 1/2 c vegetable oil
- 2 tsp vanilla extract
- 1 c cooked (cooled) quinoa
- 2 c old fashioned oats
- 1 c 60% (+) dark chocolate chips
White Chicken Chili with Bacon

Warm the olive oil in a stockpot over medium-high heat
- 2 cans white kidney, cannellini, or white beans
- 1 lb chicken breast, cut into 1 inch cubes
- 5 slices thick-cut Gluten Free bacon, chopped
- 2 shallots, diced
- 1 large carrot, diced
- 5 leaves fresh basil, chiffonade
- 1/2 cup brown sugar
- 3 tbsp. olive oil
- 1 tsp. paprika
- 1/2 tsp. chili powder (or more, to taste)
- salt & pepper, to taste
