cookie - Peanut Butter & Banana Oatmeal Chocolate Chunk Cookies

Preheat oven to 350˚F. In a large bowl mash the bananas with the peanut butter, oil and vanilla
- 3 large, very ripe bananas
- 1/2 cup peanut butter, preferably all-natural (just peanuts), or almond butter
- 1/4 cup canola or olive oil
- 1 tsp. vanilla extract
- 2 cups old-fashioned (large flake) or quick oats
- 1/3 cup shredded coconut (optional)
- 1 tsp. baking powder
- 1/4 tsp. cinnamon
- 1/4 tsp. salt
- 1/2 – 1 cup chopped dark chocolate or chocolate chips

Step 1 All add ingredients (EXCEPT the coconut oil) to a medium sized bowl and stir until well combined
- 2 cups Bob's All-Purpose Gluten-Free Flour
- 3/4 cups homemade almond milk
- 1/2 cup organic coconut oil (solid, not melted)
- 2 tablespoons unrefined granular sweetener
- 1 tablespoon baking powder
- 1/2 teaspoon Himalayan pink salt
Muffins - Zucchini Muffins

Preheat the oven to 350F. Fill a standard muffin pan with liners
- 1/2 cup coconut flour
- 1/4 cup almond flour
- 2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 4 eggs
- 1/3 cup honey
- 1 teaspoon vanilla
- 2 tablespoons coconut oil
- 1/2 teaspoon apple cider vinegar
- 1 banana, mashed
- 1 cup unpeeled, finely shredded zucchini (about 2 small zucchini)
Crispy Smashed Potatoes

Preheat oven to 500 degrees
- 2 pounds small red potatoes (1 1/2 – 2″ diameter)
- 6 tablespoons extra virgin olive oil (more if needed)
- 1 teaspoon thyme leaves
- fresh ground salt and pepper to taste
Gluten Free Peanut Butter and Banana Chocolate Chunk Cookies

Preheat your oven to 350 degrees
- 3 large ripe bananas
- 1/2 C peanut butter
- 3 tbsp coconut oil(or substitute any flavorless oil like canola)
- 1 tsp vanilla
- 1-2 tbsp maple syrup
- 2 C old fashioned rolled oats(certified gluten-free if necessary)
- 1/3 C shredded coconut
- 1 tsp baking powder
- 1/4 tsp cinnamon
- 1/2 tsp salt
- 1/2 C chocolate chips
- up to 1/2 C other add ins(dried fruit, nuts, or more chocolate chips) Optional
fudge - Chocolate nutella

Combine all ingredients in a food processor or blender
- 1/4 cup coconut butter, melted
- 1/4 cup choc-hazelnut spread or Healthy Nutella
- 1-2 tsp cocoa powder or cacao powder
- 65 g very-ripe banana (about 1/4 a large banana)
- 1/8 tsp salt
- sweetener if desired (Some people want it, others don’t.)

- For the cookies:
- 1.5 large, ripe bananas, mashed
- 1/4 c. unsalted, peanut butter ( I used reconstituted PB2 powdered peanut butter)
- 1/2 t. pure vanilla extract
- 1 T. melted coconut oil
- 2 T. granulated stevia
- 1 1/4 c. ground flaxseed meal (you could also substitute almond flour)
- 1/2 t. baking powder
- pinch of salt
- For the frosting:
- 1/2 ripe banana
- 1 T. unsalted peanut butter (I used reconstituted PB2)
- 2 T. unsweetened, vanilla almond milk
- 1 t. granulated stevia

Pat dry the thighs dry. Add the thighs into the 6qrt Electric Pressure Cooker
- 2 lbs boneless chicken thighs
- 2 cups honey bbq sauce
- 1/2 cup water
- 1-2 tsp smoked paprika
- 1/4 tsp cayenne
- 3 Tbl brown sugar
- 3 Tbl honey
- 1 tsp salt
