quickbread - Chocolate Banana Bread

Melted coconut oil can be used in place of the butter
- 3 large ripe bananas (easily mashable)
- 1/3 cup melted butter
- 3/4 cup brown sugar (packed, light or dark)
- 1 teaspoon salt (1/2 a teaspoon if using salted butter)
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 1/4 cup all purpose flour
- 1/4 cup natural unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon ground allspice
- 1/2 cup semi-sweet chocolate chips
- 1 5x9-inch loaf pan

In a small saucepan, mix together the liquid, coconut flour and shredded coconut
- 1/2 cup full-fat canned coconut milk PLUS 1/4 cup water OR 3/4 cup homemade coconut milk OR 3/4 cup water
- 3 Tbs. coconut flour (get coconut flour here)
- 2 Tbs. finely shredded coconut (get finely shredded coconut here)
- 1 pastured egg OR 1/2 banana, mashed for egg free option
- Oatmeal toppings of your choice

1. Place all ingredients, except salt and pepper, into the Vitamix container in the order listed and secure lid
- Pesto Sauce
- Yield: 1 1/2 cups (360 ml)
- 1/2 cup (120 ml) olive oil
- ...1/2 cup (50 g) grated Parmesan cheese
- 3 medium garlic cloves, peeled
- 2 cups (80 g) fresh basil leaves
- 3 tablespoons (25 g) pine nuts

Set the oven to 400F Whisk dry ingredients in a mixing bowl

- 1 tbsp psyllium husk powder
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon baking soda
- 1/4 teaspoon sea salt

- 2 tablespoons avocado oil (or other fat)
- 1/2 cup chopped kalamata olives
- 2 tablesoons finely chopped red onions (optional)
- 1/4 cup plus 2 tablespoons unsweetened almond milk
- 1 teaspoon apple cider vinegar

Place a heatproof dish filled with 2 inches of water on the bottom rack of the oven

- 1/2 cup arrowroot powder*

In a medium sized saucepan, on medium to medium high heat, add the maple syrup and cashew butter
- 1 cup maple syrup
- 1/2 cup cashew butter (I am sure another nut butter may work too)
