bread - hamburger buns / focaccia bread

Mix the wet ingredients together in the bowl of your mixer using 1 cup of the water
- 1 1/3 cups brown rice flour
- 2/3 cup sweet rice flour
- 1 cup tapioca starch or flour
- 1 Tablespoon instant yeast
- 2 teaspoon unflavored gelatin
- 1 Tablespoon xanthan gum
- 1/2 teaspoon onion powder (optional)
- 1 1/2 teaspoon salt
- 2 teaspoons sugar
- 1 – 1 1/4 cup warm water
- 4 eggs
- 1/4 cup vegetable oil
- 1 teaspoon vinegar
- 1 Tablespoon chia seed mixed with 1/4 cup water (optional)
- olive oil (optional)
- Italian seasoning (optional)
- coarse salt (optional)

Dissolve and bring to a boil for 1 minute
- 1 Cup milk
- 4 Cups sugar
- 1 stick butter
- 3/4 Cup cocoa
- 1 Cup peanut butter
- 2 tsp vanilla
- 6 Cups oats

Combine all ingredients in a food processor and blend until a smooth dough is formed
- 1/2 can black beans- rinsed and drained
- 1 mashed banana
- 1/2 cup cocoa powder (or raw cacoa powder)
- 1/4 cup dates
- 1/4 cup raisins
- 3 tbs agave syrup
- 2 tsp almond extract (see notes for options)
- 1/2 tsp cinnamon (optional to add depth of flavour)
- 1/2 tsp stevia
- 1/4 cup GF flour (see notes for options)
- 2 tbs chia seeds
- Coating
- 2 tbs cocoa and 1tbs powdered unrefined sugar (e.g rapadura). The sugar is not necessary if you prefer a ‘bitter’ coating. You could also add crushed nuts or coconut here
Gluten Free Egg Noodles

In a bowl, whisk together starches, xanthan gum, and salt
- 1/2 cup cornstarch (or tapioca starch for corn-free)
- 1/2 cup potato starch + appx. 1/2 - 3/4 cup more for kneading + more for dusting (or more cornstarch for potato-free)
- 4 teaspoons xanthan gum (or guar gum for corn-free)
- 1/4 teaspoon fine sea salt
- 3 large eggs
- 1 Tablespoon extra virgin olive oil (I used extra light flavor)

Preheat oven to 350. Mix all the dry ingredients in one bowl
- 1 1/2 cup oat flour
- 1/2 cup almond butter
- 1/2 cup shredded unsweetened coconut
- 1/3 cup maple syrup
- 1/4 cup Nutiva coconut oil melted
- 1 tsp baking powder
- 1 tsp salt
- 1 tsp ground vanilla bean or vanilla extract
- 1/2 tsp almond extract
- 1 egg (I used a flax egg replacer)
- 1/2 dark chocolate bar roughly chopped (cacao nibs would work well too)

- 1/2 teaspoon grain free baking powder
- 1/4 teaspoon sea salt

- 1 Tablespoon xanthan gum
- 2 teaspoons sugar
- 1 teaspoon unflavored gelatin
- 1/4 teaspoon salt
- 1 large egg
- 6-8 Tablespoons butter, melted (or 8 Tablespoons Spectrum organic shortening)
- 1/4 cup + 1 – 2 Tablespoons milk or milk substitute (or 1/4 cup only if using 8 Tablespoons butter/shortening)
