- 1/2 cup long grain brown rice (this is not the quick type of rice)
- 3 carrots, peeled and sliced
- 1 large potato, cut into 1" cubes
- 1 stalk celery, diced
- 1 yellow or sweet onion, diced
- 2 cloves garlic, minced
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes, more to taste
- 1/2 teaspoon Kosher or sea salt, more or less to taste
- 2 fresh sprigs thyme, stems removed
- 1 pound boneless, skinless chicken breast....about two breast filets, cut into 1" pieces
- 4 cups chicken broth, low sodium, fat free
- 1 cup milk (I used 1%, skim is not recommended for this recipe)
- 1 tablespoons cornstarch
Pasta - Spinach Ricotta Shells

Bring a large pot of salted water to a boil
- 4 Tablespoons salted butter
- 2 shallots, chopped
- 5 cups packed fresh baby spinach
- 1 large egg
- 1/2 cup ricotta cheese
- 500 grams conchiglie or large pasta shells

Preheat oven to 350 degrees
- 3 large egg yolks
- 1 can sweetened condensed milk
- 1/2 cup fresh lemon juice (about 3 lemons, see notes)
- 8 ounces cream cheese, softened
- 1 tbsp gluten-free flour mix
- If you want to make this recipe grain free, you can use sifted coconut flour as your flour.
Salad - Broccoli Salad

1 Bring a large pot of water, salted with a teaspoon of salt, to a boil
- 1 teaspoon salt
- 5-6 cups fresh broccoli florets (about 1 pound of florets)
- 1/2 cup toasted slivered almonds
- 1/2 cup cooked, crumbled bacon
- 1/4 cup of red onion, chopped
- 1 cup of frozen peas, thawed (or fresh peas if you can get them)
- 1 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1/4 cup honey

Chop unsweetened chocolate very finely
- Sweetener options:
- 1/4 cup brewed coffee
- 1/4 cup half and half
- 1 1/2 teaspoons vanilla extract
- 3 1/2 ounces unsweetened chocolate (3 1/2 squares of Baker’s Chocolate)
- 3 Tablespoons erythritol + 2 teaspoons xylitol + 1/8 teaspoon pure stevia powder
- OR
- 10 teaspoons honey + 1/8 teaspoon pure stevia powder
- 2 eggs, preferably organic, room temperature
- 2 ounces of cream cheese**

brownie - Luscious Beet Brownie Recipe

Preheat oven to 350 degrees F
- 5 oz dark chocolate, 72% or higher cocoa content
- 1/4 cup coconut oil
- 1/3 cup raw honey
- 2 omega-3, free range eggs
- 2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- 1 cup blanched almond flour
- 2 Tablespoons coconut flour
- 1/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 1/4 teaspoon salt
- 2 cooked beets, pureed (to save time use organic, canned beets)
Two-Bite Black Bean Fudge Cupcakes

- Cupcake
- 1 – 19 oz. can black beans, made fresh or canned – drained and rinsed
- 1/3 cup coconut sugar
- 2 large eggs
- 1/3 cup extra virgin coconut oil, melted + extra for greasing
- 1/4 cup cocao powder + extra for dusting
- 2 tsp pure vanilla extract
- 1/4 tsp Himalayan rock salt
- 1/4 tsp green stevia leaf powder or 1/8 tsp white stevia powder *see note
- 1/3 cup dark chocolate chips – I used Enjoy Life chips
- 1/4 cup unsweetened shredded coconut
- 1/4 cup walnuts, chopped
- Frosting
- 2 tbsp coconut flour
- 6 tbsp water
- 1 tbsp extra virgin coconut oil
- 1 tsp pure vanilla extract
- pinch stevia *see note
bread - 3 ingredient Naan

- 1 cup Organic Coconut Milk, canned and full fat
