Caesar Salad

A combination of extra-virgin olive oil and canola oil gave our Caesar Salad dressing a neutral base
- Croutons:
- 5 tablespoons extra virgin olive oil
- 1/2 teaspoon garlic paste from 1 medium clove
- 1/2 - 3/4 loaf ciabatta (or other crusty bread), cut into 3/4-inch cubes (about 5 cups)
- 1/4 cup water
- 1/4 teaspoon table salt
- 2 tablespoons finely grated Parmesan cheese
- Salad:
- 3/4 teaspoon garlic paste from 1 large clove (use rasp to grate into paste)
- 2 - 3 tablespoons juice from 1 to 2 lemons
- 1/2 teaspoon Worcestershire sauce
- 6 anchovy fillets, patted dry with paper towels, minced fine, and mashed to paste with fork (1 tablespoon)
- 2 large egg yolks (1/4 cup Egg-Beaters can be used)
- 5 tablespoons canola oil
- 5 teaspoons extra virgin olive oil
- 1 1/2 ounces finely grated Parmesan cheese (about 3/4 cup)
- Ground black pepper
- 2 - 3 romaine hearts, cut crosswise into 3/4-inch-thick slices, rinsed, and dried very well (8 to 9 lightly pressed cups)
Chicken Bacon Ranch Pizza

Pizza Dough: Preheat oven to 400 F
- Pizza Dough:
- 1/2 cup bread flour
- 1/2 cup whole wheat flour
- 1 1/2-2 cups flour
- 1 tablespoon honey or sugar
- 1 envelope fast rising yeast (or 2 1/4 teaspoons fast rising yeast)
- 1 teaspoon salt
- 1 cup hot water
- 2 tablespoons oil
- 1/2 lb cooked bacon, crumbled
- 2 chicken breasts, diced and sauteed with 1/2 packet ranch dressing mix
- White Sauce:
- 2 Tbsp. reserved grease from bacon
- 1 Tbsp. cornstarch
- 1/2 cup milk
- 1/2 packet ranch dressing mix
- Shredded mozzarella and/or cheddar/jack cheese
- Diced tomatoes or green onion on the top
