Chicken Scampi (like the Olive Garden)

1. Make scampi sauce by melting butter in a preheated pan over medium/low heat

- 1 1/2 Tablespoons Butter
- 1 Tablespoon Chopped Onion
- 1/8 Cup Minced Garlic (4-6 cloves)
- 3/4 Cups Chablis Wine
- 1/4 teaspoon salt
- 1/4 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes
- 1/4 teaspoon ground black pepper
- 1 teaspoon minced fresh parsley
- 1/2 cup heavy cream
- Chicken
- 6 Chicken tenderloins
- 1/4 cup all-purpose flour
- 1/2 green bell pepper, cut into strips
- 1/2 red bell pepper, cut into strips
- 1/2 yellow bell pepper, cut inot strips
- 1/2 chopped red onion
- 1 teaspoon minced fresh parsley
- Angel Hair Pasta
- Optional Garnish
- freshly grated parmesan cheese

Preheat grill to medium. In a large bowl, toss the vegetables with olive oil and season with salt and pepper
- Dressing:
- 1/2 bunch asparagus, trimmed and cut into bite-size pieces
- 1 pint cherry tomatoes
- 1 medium red onion, cut into 1/2-inch rings
- 1 yellow bell pepper, quartered, seeds and ribs removed
- 1 red bell pepper, quartered, seeds and ribs removed
- 1/4 cup extra-virgin olive oil, for brushing

- BLONDIES:
- 1 stick (8 tablespoons) butter
- 1 1/3 cups packed light brown sugar
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1 teaspoon freshly grated orange zest
- 2 1/8 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon ground cinnamon

- 2 teaspoons pure vanilla extract
- 24 tablespoons (3 sticks) butter, cut into 24 pieces and softened at room temperature

- The Crust:
- 1/3 cup plus 1 Tbsp. warm water
- 3/4 tsp. yeast

- 1 cup bread flour
- 1/2 tsp. salt

- 1/4 cup creamy peanut butter

Homemade Cookie Butter Peanut Butter

My two favorite spreads are combined into one
- 16 ounces honey roasted or lightly salted roasted peanuts
- 12 to 15 gingersnap-style cookies (Speculoos cookies, Trader Joe's Bistro Bisuits, Biscoff Cookies, Keebler Gingersnaps, Cinnamon Graham Crackers, Kinnikinnick Ginger Snap Cookies, or similar)
- 1 tablespoon ground cinnamon, or to taste
- 1/2 teaspoon vanilla extract
- 1 heaping cup + (up to 2) white chocolate chips (or 6 to 8 ounces diced white chocolate, or vegan white chocolate chips)
