Yeast Bread: French Bread & Baguettes

1. Put flour in your mixer bowl
- 3 cups bread flour
- 1 cup all-purpose flour
- 2 teaspoon active quick rising dry yeast (or active dry yeast)
- 2 teaspoon salt
- 1 3/4 cups warm water
- 1/2 tsp sugar (if using active dry yeast)
Juicy Meatball Pitas

For the meatballs: Pulse the onions, bell pepper and garlic in a food processor until finely ground
- Meatballs:
- 1 lb ground beef
- 2 1/2 ounces fine dried breadcrumbs
- 2 tablespoons barbecue seasoning
- 1 tablespoon ground coriander
- 1 tablespoon ground cumin
- 2 cloves garlic, crushed
- 2 small onions (maybe use less or try dried minced onion)
- 1 red bell pepper (maybe use less)
- 1 egg (try for binder)
- Handful fresh cilantro, chopped
- Salt and freshly ground black pepper
- Oil, for frying
- Tzatziki Sauce:
- 1/2 cucumber
- 1/2 cup Greek yogurt
- 2 tablespoons sour cream, optional
- Small handful fresh mint, chopped
- Salt and freshly ground black pepper
- Sandwich:
- Whole wheat pitas, for serving
- Arugula, for serving
- Cherry tomatoes, halved, for serving
Brined Pork Chops

To make the brine: In a large container, add all of the ingredients and stir to combine
- 1/2 cup salt
- 1/3 cup sugar
- 2 tablespoons fennel seed
- 2 tablespoons coriander seed
- 1 teaspoon crushed red pepper flakes
- 3 bay leaves
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 ribs celery, diced
- 4 cloves garlic smashed
- 4 quarts cold water
- 4 bone- in pork rib chops
Queso Fundido with Chorizo

Preheat the oven to 425 degrees F
- Vegetable oil, for oiling the baking dish
- 6 ounces chorizo or spicy Italian sausage, casings removed
- 1/4 cup chopped onion
- 1 large clove garlic, minced
- 2 cups grated Oaxaca or mozzarella cheese
- 6 flour tortillas, warmed
Cheesecake: White Chocolate Raspberry Cheesecake Bars

Heat oven to 350 degrees F
- Crust:
- 12 OREO Cookies, finely crushed
- 2 tablespoons butter
- (optional: use peach kuchen bars crust recipe)
- Filling:
- 2 ounces white baking chocolate, melted
- 2 (8 ounce) packages cream cheese, softened
- 1/2 cup white sugar
- 1 teaspoon vanilla
- 2 eggs
- 1/4 cup red raspberry preserves, warmed & strained through seive to remove seeds
- (try adding some raspberry Kool-aid drink mix to raspberry preserves to add more flavor)
- Topping:
- 1 ounce of white baking chocolate, melted (for drizzle)

- 1 unbaked pie shell (to fit a 9.5-inch deep dish pie plate)
- 2 large eggs
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- 1/2 cup (2.5 ounces) all-purpose flour
- 1/2 cup (3.75 ounces) granulated sugar
- 1/2 cup (3.75 ounces) brown sugar
- 3/4 cup (1 1/2 sticks, 12 tablespoons) butter, softened
