Pound Cake Martini

This is an awesome cocktail that tastes delicious and has the wonderful aroma of fresh baked pound cake
- 2 parts Vanilla Vodka
- 1 part Frangelica
- 2 parts Pineapple juice
Sticky Ribs

Heat oven to 275 Combine all ingredients for dry rub and apply to ribs
- Dry rub
- 1/4 cup chili powder
- 1 TBSP garlic powder
- 2 tsp dry mustard
- 1/2 plus 1 TBSP packed brown sugar\
- salt and pepper
- 8 lbs baby back ribs
- 1 cup ketchup
- 1/4 cup cider vinegar
- 2 TBSP molasses
- 2 TBSP Worcestershire
Saltine Toffee

Line a 15 inch jelly roll pan with tin foil
- 1 sleeve of Club crackers
- 1 cup of butter cubed
- 3/4 cups of sugar
- 2 cups of chocolate chips
Chicken Bacon Ranch Casserole

Directions: Preheat oven to 375 and grease a 9 x 9 baking dish
- 1/2 lb. bacon, cooked and chopped
- 1 lb. boneless, skinless chicken breasts, diced
- 1 tbsp. olive oil
- 1 packet dry Ranch dressing mix
- 8 oz. pasta (I used Shells)
- 1 cup Mozzarella cheese, shredded
- 1/2 cup Cheddar cheese, shredded
- Salt/Pepper to taste
- 1 jar Alfredo sauce (14.5 oz)
Maple Syrup-Glazed Sweet Potato Casserole

1 Preheat oven to 400°. 2 Drain the sweet potatoes and add them into a large bowl
- 40 oz. canned, chopped sweet potatoes in light syrup, drained
- 1 1/4 tsp. pumpkin pie spice (divided)
- 1/4 tsp. salt
- 1 tsp. vanilla extract
- 2 large egg whites
- 1/4 cup unsalted pumpkin seeds (also called pepitas)
- 1 Tbsp. olive oil
- 2 Tbsp. maple syrup
- 2 Tbsp. all-purpose flour
Greek Spinach Pie (Spanikopita)

Instructions Preheat oven to 350° F
- Nonstick cooking spray
- 2 lbs . frozen chopped spinach , thawed
- Cheesecloth
- 4 tsp . olive oil , divided use
- 1 medium onion , finely chopped
- 1 cup crumbled feta cheese
- 4 large eggs , lightly beaten
- 1/2 tsp . sea salt (or Himalayan salt)
- 1/4 tsp . ground black pepper
- 1/2 tsp . ground nutmeg
- 8 sheets phyllo dough (each approx. 12 x 17-inches), thawed, covered in a

- nonstick vegetable cooking spray
- 1 1/2 cups bittersweet chocolate chips, divided (about 9 ounces)

Heat a large stock pot over medium-high heat
- 2 pounds ground beef chuck
- 1 pound bulk Italian sausage
- 3 (15 ounce) cans chili beans, drained
- 1 (15 ounce) can chili beans in spicy sauce
- 2 (28 ounce) cans diced tomatoes with juice
- 1 (6 ounce) can tomato paste
- 1 large yellow onion, chopped
- 3 stalks celery, chopped
- 1 green bell pepper, seeded and chopped
- 1 red bell pepper, seeded and chopped
- 2 green chile peppers, seeded and chopped
- 1 tablespoon bacon bits
- 4 cubes beef bouillon
- 1/2 cup beer
- 1/4 cup chili powder
- 1 tablespoon Worcestershire sauce
- 1 tablespoon minced garlic
- 1 tablespoon dried oregano
- 2 teaspoons ground cumin
