Mushroom and Provolone Patty Melts

1. Heat a large nonstick skillet over medium-high heat
- 1 pound ground sirloin
- Cooking spray
- 1 tablespoon olive oil
- 1/4 cup thinly sliced yellow onion
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
- 1 (8-ounce) package sliced cremini mushrooms
- 1 1/2 teaspoons all-purpose flour
- 1/4 cup dark beer (such as porter)
- 8 (1.1-ounce) slices rye bread
- 4 (3/4-ounce) slices reduced-fat provolone cheese
Tomato Basil Bread

In a large mixing bowl, dissolve yeast in water
- 1 (1/4 ounce) package active dry yeast
- 3/4 cup warm water (110 to 115 degrees )
- 1/4 cup fresh basil, minced (may be substituted with 2 tablespoons dried basil)
- 1/4 cup parmesan cheese, grated
- 3 tablespoons tomato paste
- 1 tablespoon sugar
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/8-1/4 teaspoon crushed red pepper flakes
- 2 1/2-2 3/4 cups bread flour
Cranberry Jell-O Salad (2 days to set!)

Mix Jell-O, sugar and boiling water
- 3 small boxes of strawberry or raspberry Jell-O
- 2 cups sugar
- 5 cups boiling water
- 1 lb. fresh cranberries
- 1 navel orange
- 1 large can crushed pineapple including juice
Grandma Monson's Oatmeal Cake

In a large mixing bowl, put in the oatmeal and pour boiling water over it
- Topping:
- 1 cup oatmeal
- 1⅓ cup boiling water
- ½ cup margarine
- 1 cup brown sugar
- 1 cup sugar
- 2 eggs
- 1⅓ cup flour
- ½ tsp. salt
- 1 tsp. soda
- ½ tsp. cinnamon
- 6 tbsp. melted margarine
- ½ cup brown sugar
- ¼ cup evaporated milk
- 1 tsp. vanilla
- 1 cup chopped nuts (I use pecans)

- 2/3 cup sun-dried tomatoes, cut into 1-inch pieces if large
- 1 14-ounce can artichoke hearts, drained and quartered

We had this delicious salad at a friend's house the other night
- 1 cup green lentils, rinsed
- sea salt and pepper
- 2 Tbsp plus one tsp olive oil
- 1 1/4 pound skinless salmon fillet, cut into 4 pieces
- 2 Tbsp rice wine vinegar
- 2 tsp Dijon mustard
- 1/4 red onion, chopped
- 1/2 cup chopped flat leaf parsley
- 1 bunch arugula (can use fresh or bagged)
