- Cooking spray
- 8 ounces cooked elbow macaroni
- One 12-ounce can evaporated milk
- 1 1/2 cups whole milk
- 1/4 cup (1/2 stick ) of butter, melted
- 1 teaspoon salt
- Dash of pepper
- 2 large eggs, beaten
- Two 10-ounce bricks sharp Cheddar cheese, grated (about 5 cups)
- Dash of paprika
Apricot-Glazed Scallops ( clean eating)

*Healthy note: Scallops are rich in vitamin B12, omega-3 fatty acids and magnesium
- 6 oz cellophane noodles (aka bean thread noodles)
- 1 Tbsp safflower olie (I used olive oil)
- 1/2 cup minced white onion
- 1 tsp minced fresh ginger ( I used 1/2 tsp of ground ginger)
- 2 cloves of garlic, minced
- 2 lb fresh or frozen large sea scallops (thaw if frozen)*
- 1 1/2 tbsp low sodium soy sauce
- 1/2 cup all natural apricot preserves
- 2 cups fresh or frozen snow peas (do not thaw, if frozen)
- Sea salt and fresh ground black pepper to taste
Muffaletto Olive and Vegie mix/sauce

Good in a wrap with hummus or serve on toasted bagette or thin with a bot of wine and add chopped tomatoes and use
- Recipe1:
- 1 can black olives
- 6 green olives (with or without pimientos)
- 4 cloves minced garlic (large cloves)
- 1 teaspoon balsamic vinegar
- 1 tablespoon extra virgin olive oil
- (optional) herbs of your choice
- Recipe 2:
- 1/8 to 1/4 cup Garlic, chopped
- 1 lb. diced celery
- 2 cups Calamata Olives, drained and chopped (Make sure you rinse & drain olives well)
- 2 cups black olives, drained and sliced (Make sure you rinse & drain olives well)
- 2 cups Spanish olives drained and sliced (Make sure you rinse & drain olives well)
- 1/2 to 3/4 cups roasted red peppers, drained and cut up
- 1 1/2 cups extra virgin olive oil ( or less, drizzle till damp)
- pinch of salt
- pepper to taste
- 1 shredded carrot
- can add 1 Tbsp red wine vinegar
- 1/4 cup fresh parsley

Try this sauce out. It takes all of 2 minutes to make
- 1/2 cup extra virgin olive oil
- 1 egg
- 1/4 tsp garlic
- 1/4 tsp salt
- 1 tsp dijon mustard
- 1 tbs fresh-squeezed lemon juice

- 2 red bell peppers, sliced 1/2 inch thick
- 1 onion, cut into 8 wedges
- 3 teaspoons dried oregano
- 3 or more teaspoon ground cumin
- kosher salt and black pepper
- 1 1/2 pounds flank steak or brisket or pork roast, cut crosswise into thirds
- I would not put the pepper or onions in the slow cooker, but saute them with a little of the same spices then add to the meat after then meat is cooked, so vegies are crisp tender

- 1/4 cup fresh cilantro leaves
