- 1 cup ALBERS® Yellow Corn Meal
- 1 cup all-purpose flour
- 1/3 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup whole milk
- 2 large eggs, lightly beaten
- 3 tablespoons vegetable oil
- 1 cup (4 oz.) shredded Monterey Jack cheese
- 1 can (11 oz.) whole kernel corn, drained
- 3 tablespoons chopped pickled jalapeños

directions 1 1. Preheat oven to 375 degrees
- Nonstick Olive Oil cooking spray
- 2 medium eggplants (about 2 lbs. total)
- 2 tbs extra-virgin olive oil
- 6 cloves garlic, minced (1 tbs minced)
- 3 tbs chopped fresh thyme, oregano, and/or marjoram
- 3 cups purchased marinara sauce
- 3 tbs chopped fresh basil

1. Bring broth to a boil in a medium saucepan over medium-high heat; stir in lemongrass, lime leaves, and galangal
- * 2 cups fat-free, lower-sodium chicken broth
- * 3/4 cup chopped peeled fresh lemongrass
- * 6 Kaffir lime leaves, torn
- * 5 (1/4-inch) slices fresh galangal
- * 1 1/2 tablespoons red curry paste
- * 1 (4-ounce) package presliced exotic mushroom blend (such as shiitake, cremini, and oyster)
- * 8 ounces skinless, boneless chicken breast, cut into bite-sized pieces
- * 1 (13.5-ounce) can light coconut milk
- * 1 tablespoon Thai fish sauce (such as Three Crabs)
- * 2 teaspoons brown sugar
- * 1/3 cup thinly diagonally cut green onions
- * 2 tablespoons fresh lime juice
- * 6 tablespoons coarsely chopped fresh cilantro, divided
- * 3 ounces uncooked wide rice noodles
- Look for Kaffir lime leaves and galangal—also known as Thai ginger—at ethnic markets and gourmet grocers. If you can't find them, use an extra 1/4 cup chopped peeled fresh lemongrass to flavor the broth. You can use regular ginger in place of galangal.
Scrumptious Thai Coconut Red Curry

This is probably my favorite dish to make
- 1 tablespoon red curry paste
- 1 (15 ounce) can coconut milk (I use light)
- 1/4 cup fresh basil
- 1/4 cup bamboo shoot
- 3 tablespoons fish sauce
- 2 tablespoons brown sugar
- 1/3 cup chicken stock
- ( can add carrots, jalapenos, baby corn, any vegies you want!!)
- 1/2 cup mushroom
- 1/2 red bell pepper
- 1/2 green pepper
- 1/2 yellow pepper
- 1/2 onion (yellow or white)
- 2 chicken breasts (optional)
- 10 ounces brown rice
Avocado and Salmon Salad

- 1 small can (6 oz) boneless and skinless salmon
- 1 ripe avocado
- 1 1/2 stalks celery, diced
- 1/2 tsp apple cider vinegar
- Salt and pepper to taste.

Makes 10 Corn Dogs Recipe:
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 Tablespoon baking powder
- 1/4 teaspoon salt
- 1 egg, beaten
- 1 1/2 cups buttermilk (regular milk works too)
- 1 Tablespoon vegetable oil
- 1 Tablespoon honey
- 1 (10 count) package Hot Dogs
- 10 wooden skewers or chopsticks
- 2 Quarts Vegetable Oil, for frying
